Ground Chicken Tacos

This is a basic taco recipe but my family loves tacos so we used this Ground Chicken Taco recipe for our Watermelon Dinner Party with a yummy Watermelon Salsa, a link to this recipe is below the recipe.

Ground Chicken Tacos

Sauté the following ingredients on medium heat until onions are translucent and add **fresh garlic at the end of sautéing process so the garlic doesn’t burn.

*Peppers of your choice, I used Poblano and Bell Peppers
*1 small Onion of your choice,diced (I used half Red Onion and half Yellow Onion.)
*2 tablespoons of Extra Light Olive Oil
*Red Pepper Flakes to taste, these are hot!

**2 Cloves Garlic, minced and/or Garlic Pepper

After sautéing, remove pepper and onion mixture from above Cast Iron Skillet and cook the ground chicken in skillet and then add pepper and onion mixture to the cooked chicken.

Meat:

* 2 pounds Ground Chicken, cooked in Cast Iron Skillet

Add:

*Deverl’s Seasoning to taste or Salt

Shells:

*Taco Shells, soft or hard

Toppings:

*1 can Black Olives, sliced
*1/2 Head of Lettuce shredded
*Grated Cheese of your choice, I used Mozzarella

Serves 6-8 tacos

We made these for our Watermelon dinner and I made a Watermelon Salsa but you could use any salsa of your choice.

My Ground Chicken was frozen so I had to thaw them first. Thaw in refrigerator, or I used microwave to thaw the chicken, follow your microwaves directions for thawing meat.

Balsamic Vinegar Watermelon & Baby Lettuce Salad

Balsamic Vinegar Watermelon & Baby Lettuce Salad

*3/4 bag Baby Spinach
*6 cups of your favorite Baby Lettuces (We used lettuce from are garden, Plato II, Lollo Rosa Lettuce, Butter Crunch.)
* 8 Strawberries sliced
*21 Grapes, halved
*1 4 ounces container Crumbled Feta Cheese

Caramelized Pecans

1/4 cup Sugar
1/2 cup pecan pieces

Use a sauce pot and cook sugar and pecans on medium low heat, stirring constantly until the sugar caramelizes and then separate on to a piece of wax paper be careful these are very hot!

Plate each salad separately starting with the lettuce and go down the list of ingredients. You will need a very small drizzle on each salad, the dressing is strong in taste after being simmered down. See pictures.

Balsamic Vinegar Dressing

*1 cup Balsamic vinegar
*1 teaspoon Soy Sauce
*1/2 cup Sugar
*1 sprig of Fresh Rosemary

Use a small stainless steel or glass Sauce pot and simmer the above ingredients for the dressing reducing the dressing by half stirring while reducing down.

When dressing is reduced down, cool and drizzle over each individual pre-made salads.

Serve immediately
