Groundhog Day

We saw this groundhog on Pinterest so we had to make a simple version of the groundhog. We used a No-bake Peanut Butter and Oatmeal Cookie recipe you can find it Here..

For the Groundhog we used one tootsie roll for the body and another to make the ears and nose. We also used white decorating sprinkles for the teeth, white decorating balls for the eyes and using an edible marker put on the black dots.

Jungle Baby Shower Chicken & Apple Salad Sandwiches

Chicken & Apple Salad Sandwich

Salad

*1 Pre-cooked Rotisserie Chicken (Garlic or Lemon Pepper) or 4 Cooked Seasoned Chicken Breasts, cut into bite sized pieces
*1 cup halved green or red Grapes
*3-4 Apples, small bite size pieces, (Gala, Pink Lady, Honey Crisps etc…)
*1/4 cup sliced Almonds

Dressing

*3/4 cup Olive Oil Mayonnaise, more or less
*1/4 teaspoon Black Pepper, or to taste

Combine together. Serve on a lettuce leaf inside a croissant or Ciabatta Roll

*1 Head of Lettuce, washed
*Croissants or Ciabatta Rolls
*Sandwich Picks, optional

Makes about 40 small sandwiches.

Note: In the pictures below I tripled the above Salad recipe for a shower and used only about half of the salad That I made, so I had extra.
