Apple Pie Filling

We had quite a few apples this year on our apple tree and they aren’t the type of apples for making pie filling but I used them any way in this Apple pie filling recipe. The best apples would be cooking apples like firm; Granny Smith, Pink Lady, Honeycrisp, Fuji, Gala etc… My apples are the Red Delicious so that is what I used to make this Apple Pie Filling. If you are going to make this you will want to use a good cooking apple for best results.

Apple Pie Filling

Prepare apples:

*4 pounds of Cooking Apples, washed, peeled and sliced, place sliced apples in lemon water so they won’t turn brown use about 3 tablespoons of Lemon Juice per cup of water in bowl.

Melt together:

*1/3-2/3 cup Sugar, I only used 1/3 cup because I used *Red Delicious Apples that are already sweet
*4 tablespoon butter

In a Stock Pot melt butter adding the sugar and then the sliced, drained apples.
Cook just until apples start to get soft about 2 minutes.

Mix in Bowl:

*1/2 cup Cornstarch
*1/2 cup Water
*2 teaspoons Cinnamon
*1/2 teaspoon Nutmeg
*1/4 teaspoon of Salt
*2 teaspoons Lemon Juice

After combining the above Cornstarch mixture add to the hot apples and cook just until Cornstarch turns clear, then let the Apple Pie Filling Cool.

You can use it right away in a Apple Pie or I doubled this recipe and put 2 1/2 cups of the Apple Pie Filling to each Freezer bag. I used Gallon sized Bags just because that’s what I had on hand to use.

* If by chance you are like me and want to use up your Red Delicious Apples be aware it will not give you as firm pieces of Apple in your pie filling.
