Balsamic Vinegar Watermelon & Baby Lettuce Salad

Balsamic Vinegar Watermelon & Baby Lettuce Salad

*3/4 bag Baby Spinach
*6 cups of your favorite Baby Lettuces (We used lettuce from are garden, Plato II, Lollo Rosa Lettuce, Butter Crunch.)
* 8 Strawberries sliced
*21 Grapes, halved
*1 4 ounces container Crumbled Feta Cheese

Caramelized Pecans

1/4 cup Sugar
1/2 cup pecan pieces

Use a sauce pot and cook sugar and pecans on medium low heat, stirring constantly until the sugar caramelizes and then separate on to a piece of wax paper be careful these are very hot!

Plate each salad separately starting with the lettuce and go down the list of ingredients. You will need a very small drizzle on each salad, the dressing is strong in taste after being simmered down. See pictures.

Balsamic Vinegar Dressing

*1 cup Balsamic vinegar
*1 teaspoon Soy Sauce
*1/2 cup Sugar
*1 sprig of Fresh Rosemary

Use a small stainless steel or glass Sauce pot and simmer the above ingredients for the dressing reducing the dressing by half stirring while reducing down.

When dressing is reduced down, cool and drizzle over each individual pre-made salads.

Serve immediately

Serves 7

Watermelon Dessert Table

This month at our house is all about celebrating what is growing in the garden the theme of decorating is watermelon, so I tried to find recipes all related to watermelon and this is what I came up with for the dessert table.

I went a little crazy with the pictures but I hope you will enjoy them and maybe try a watermelon dish from our watermelon dinner party.

Pudding Tarts

These are as simple as it gets for making tarts.

* 1 box Vanilla Pudding and follow directions on package
* 1 box Pre-made Pie Crust and bake according to directions on package careful not to over bake with smaller pans. (The small tart pans I bought from Bed Bath & Beyond.)

I used a Mint leaf and 4 Raspberries to decorate/garnish each one, placing one of the smaller Raspberries behind Mint Leaf.

You could use watermelon diced for the center with the mint leaf.

Watermelon Lemonade

*1 large Seedless Watermelon, Blended/Pureed, strain through cheese cloth if desired
*2 12 ounce cans Frozen Lemonade Concentrate
*2 tablespoons Strawberry Syrup or Drink Syrup of your choice

Blend all together and dilute with water if desired. Chill for 1 hour and mix well before serving.
