If you like lemons you will really like this recipe.

Shredded Lemon Pork Crock Pot Style

*Pork Boston Butt Roast
*1 can Mountain Dew or 7-Up
*1/2 can which is 6 ounces Frozen Lemonade concentrate
*2-3 tablespoons of Dried Onion Flakes
*1/2 teaspoon Red Pepper Flakes
*1/4 teaspoon Pepper or to taste
*1 teaspoon Sea Salt or to taste

Add the above ingredients to your crock pot.

My roasts are usually use frozen so when I put roast in my crock pot I set crock pot on high and it takes about 6 (but if you are worried about safety thaw before cooking in the refrigerator) and then I shred the Pork removing any extra fat and let cook 1 more hour. Adjust for your crock pot in cooking time.

If my roast was fresh I would remove any extra fat before cooking. You could also simmer the roast for about an hour in a pot of water to get rid of more of the fat, drain off the water/fat and then cook on low for 6-8 hours in the crock pot, a long with the above ingredients, again adjust time to cook with your crock pot directions.

Then serve over cooked rice.
