I know St. Patrick’s Day has passed but I wanted to share the Green Dinner we had. I also realize they aren’t Irish recipes but I like to fix different foods my family likes. Hopefully this post will spark some ideas for your next fun dinner party or event.

Apple Sliced Shamrock Apple Beer
*Granny Smith Apples, (Even though these apples brown less than other apples, I placed them in lemon juice before putting on the straws.) sliced and put on straws
*Shamrock Cookie Cutter
*Black Plastic Straws, I also used the straw to punch the hole in the center of the Shamrock
*Bottles of Apple Beer
Shamrock Soft Rolls
*12 1/2 ounces (1 1/2 cups) warm Water
*2 1/2 teaspoons Dry Yeast
*1 pound 5 ounces (around 2 2/3 cups) Bread Flour, more if needed
*2 teaspoons Salt
*2 ounces (1/4 cup) Sugar
*1 ounce (1/8 cup) Milk
*1 ounce (1/8 cup) Shortening
*1 ounce (2 tablespoons) Butter
Mix together in mixer until slightly soft sticky texture or knead by hand.
Cover with moist cloth and let rise 1 1/2 hours or until double in bulk/size.
Cut dough into desired size pieces for rolls, shape and let rise on greased baking sheet for another 30 minutes (covered). ( Weigh each piece of roll dough if you want them to be exact same size rolls.)
Bake at 400*F. For 20 minutes.
Makes about 15 rolls depending on the size of rolls.

AuJu Roast Beef in Crock Pot
* Eye of Round Beef Roast
*1 8 ounce Bottle of Sugar Soda Pop of your choice
*2-3 Tablespoons Dried Onions
*1 package of AuJu Sauce Dried Mix
In a crock pot place the above ingredients in the order listed, leaving some of the dried AuJu Mix and dried onions on top of roast. Set crook pot on medium to high heat and cook overnight or 6-8 hours depending on your crock pot instructions.
Mashed Potatoes
*6 medium Red Potatoes; washed, peeled Diced, cooked, and mashed
*1/2 Square of Butter
*Milk of your choice, add as much as needed to make constancy you like
*Salt and Pepper to taste
* Optional Scallion Greens sliced in circles and add to potatoes to give the St. Patrick’s effect.
Combine the above, add Gravy if desired. (We used some of the liquid part of the Cashew Curry Soup for our gravy.). see the Cashew Gravy Soup for recipe.
Asparagus
*Asparagus, washed and hard ends removed
*Pot of boiling Water
Cook Asparagus in boiling water on medium heat just until tender and season to taste with Salt, Pepper and Butter etc……
Red Quinoa cooked according to the directions on package. We used the cooked quinoa in bottom of our soup bowls and then adding the soup on top. See Cashew Chicken Soup.

Lucky Charms Marshmallow Treats
*10-12 cups Lucky Charms Cereal
*1 Package Regular size Marshmallows
*3 tablespoons Butter or margarine
*Parchment paper sprayed with Pam cooking spray
*9×13 baking pan, depending on how thick you want treat squares etc…
In a stock pot on medium heat, melt butter and then add and marshmallows, warm marshmallows just until melted. Add Lucky Charms Cereal mix and then place in a Pam sprayed parchment lined baking pan. Cool slightly and cut in desired shape.
