*Russet Potatoes (recommend), or favorite potatoes,sliced width wise three fourths the way through the potato (make as many as needed)

*Extra Light Olive Oil

*Seasoned Salt, we like Deverel’s Seasoning

*Chipotle Chile Powder

*Freshly Ground Black Pepper

*1 teaspoon Brown Sugar, per potato

*Bacon Bits, reserve some for topping after baking

*Freshly finely grated (for easy melting) Pepper Jack Cheese

*Reserved Bacon bits

**Aluminum Foil, ripped into squares

Rinse and scrub potatoes, slice as recommended and place them in a bowl of water for about 5 minutes. Then remove from water and dry with paper towels.

Place each potato onto individual squares of foil band drizzle each potato with 1-2 tablespoons of olive oil. Then sprinkle on the remaining seasonings and wrap in aluminum foil and place on a baking sheet.

In a 400*F. pre-heated oven, bake the potatoes for about 1 hour and 15 minutes or until easily poked with a fork. Remove potatoes and remove foil and add grated cheese and bacon bit toppings. Enjoy!

Homemade Root Beer

*5 gallon Plastic Water Jug with pouring spout
*4    1/4 gallons Water
* 1 box/bottle (2 fluid ounces) Root Beer Concentrate, McCormick
*4 pounds sugar = (9 cups)
*5 pounds Dry Ice, heavy Silicone oven mitts/gloves and/or tongs- to handle the dry ice, don’t touch dry ice with your skin/body

In plastic jug add the water and sugar, stir with long wooden spoon and let dissolve 20 minutes or so… Then add root beer concentrate, stir and add the dry ice and let it bubble about 20-30 minutes before serving.
