Apple season is upon us, Our Red Delicious Apples are ripening and some of McIntosh Apples have already been picked. We are trying recipes with all apples in them for our Apple Dinner this is one of the many posts that will be coming in the next few days.
My daughter Jamie doesn’t like celery so we replaced in our croissant sandwich recipe with apples instead of the usual celery and used them at our Apple Dinner and she loved them and I hope you will like them too!
Apple Croissant Sandwiches
Chicken:
Cook the following Chicken in a Cast Iron pan or this time I used a Stainless Steel frying pan with lid because my chicken was frozen with 2-3 Tablespoons Olive Oil. Cook the Chicken until it is no longer pink inside or until the internal temperature is 165*F.
*1 package frozen Chicken Tenders, 32 oz.
Sprinkle the following Spices on the chicken in frying pan and cover with lid and cook until chicken is fully cooked.
*1/2 teaspoon Deverle’s Seasoning or Season All
1/4 teaspoon Garlic Powder
1/4 teaspoon Red Pepper Flakes
After Chicken is cooked I cut into chunks with scissors. Let cool just enough to be able to add to the salad.
Cold Salad ingredients:
*2 Honey Crisp Apples, cut in bite size pieces
*1-2 Granny Smith Apples, cut in bite size pieces
Place the cut apples in a bowl of water with 2-3 Tablespoons of Lemon Juice until ready to add to the rest of the salad (Drain of water before adding to salad).
*1 bunches of Green or Red Grapes, halved, about two cups
*1/4-1/2 Cup Sliced Almonds
Dressing:
*1/2-3/4 cup Greek Yogurt
*1/2 cup Olive Oil Mayonnaise
*3 packets of Splenda or 2 tablespoons Sugar
*2 teaspoons lemon juice
*Salt and Pepper to taste
Mix together the dressing and add to all the above ingredients.
Refrigerate until chilled and serve on croissants, we used pre-made croissants from the grocery Store.
