Peach Blackberry Pizza

If you like fruit pies then you will like the healthier side of this peach and blackberry fruit pizza.
Peach Blackberry Pizza

Toppings:



*2-3 Peaches, rinsed, peeled and sliced

*Blackberries

*Grated Cheese of your choice, optional OR drizzle with cream cheese frosting after baking.

Sweet Pizza Sauce

*2/3 cup boiling Water

Slurry/Paste

*

*1-2 tablespoons Cornstarch

*3 tablespoons cold Water

*1/4 cup granulated Sugar

*2 pinches of Sea Salt

*1/2 teaspoon Cinnamon

*1/8 teaspoon Nutmeg

*1 tablespoon Lemon Juice

In a sauce pan bring 2/3 cup of water to a boil.

Mix in a small bowl, making a slurry paste by mixing together: Cornstartch, water, sugar, and sea salt until thickened. Then add the slurry paste to the boiling water and stir until it thickens.  Remove from heat and add nutmeg, cinnamon and lemon juice.
Spread the sauce to the slightly baked crust and top with toppings and finish baking. See pizza crust below.

Drizzle with cream cheese frosting of your choice, use the cream cheese for Topping pizza after baking.

Wheat Cinnamon Pizza Crust


Proofing Yeast:

*2 tablespoons Honey

*1 1/2 cups Warm Water

*1 tablespoon active Dry Yeast

Dissolve Honey in warm water and add the dry yeast and let rise until bubbly.

Add dry ingredients along with:

*1 teaspoon Salt

*1 tablespoon Light Olive Oil

Dry Ingredients:

*2 cups Whole Wheat Flour

*1 1/2 Cups All-Purpose Flour

*1  1/2 teaspoons Cinnamon

Knead together all the above ingredients for about 10 minutes or until dough becomes smooth and elastic. Cover dough in a greased bowl and let rise for an hour or until double in bulk.

After rising divide dough into two balls and roll out two thin crusts or make one extra-large crust.

I used an extra-large pizza Pan. I like to use a pizza pan that has holes in the bottom and spray well with cooking spray. (You can also use a very small amount of corn meal on the bottom of any pizza pan to help with sticking. )

Note: Fold over the edge of the pizza if you like a thick Crust.

Bake the pizza crust at 500*F for 3 minutes, then remove pizza crust from the oven lowering the temperature to 425*F. And add the sauce, peach slices and blackberries to partially cooked crust and bake another 8-10 minutes or until crust is golden brown. Remove pizza from oven add the cheese if desired on top of pizza or cut pizza into slices , plate and drizzle or pipe on cream cheese frosting and Enjoy!

Peel the peaches and then slice them whole attached to the pit and then rove slices.
