This is a fire that started across the highway from where we live it was started by lightning. It burned over 2,000 acres. The National Guard sent a helicopter to help fight the fire. It’s still smoking and they are still working on the hot spots.

This is a wood Chuck that landed in our window well. We tried to encourage it to climb out but we finally had to call someone to come get it out.

Raisin Oatmeal Cookies

Soft Raisin Oatmeal Cookies

Cream together:

1/2 cup plus 1 tablespoon Light Olive Oil
1 cup packed Brown Sugar
1/2 Cup Sugar
1 Egg

Then add:

1/4 cup Almond Milk

Sift together the following and then add to the above ingredients.

1 cup Whole Wheat Flour
3/4 cup All Purpose Flour
1/2 teaspoon Baking Powder
1 or 1/2 teaspoon Salt, I used 1/2 teaspoon

Stir in:

3 cups Oats

Mix the following together and then add to all the above ingredients.

1 cup Raisins ( I like to microwave my raisins 1 minute with 2 tablespoons water to soften.)
1 teaspoon Vanilla
1 tablespoon grated Fresh Ginger, optional
1 teaspoon Cinnamon

After all ingredients are incorporated, use a # 2 Scoop (18/8), scoop onto a half baking sheet, greased or use Silpat. Bake @ 350* for 10-15 minutes and then remove from oven and leave cookies on baking sheet 5 more minutes to finish baking. Remove onto cooling rack. Enjoy!
