Cashew Chicken Lettuce Wraps

Chicken Cashew Lettuce Wraps

*4 boneless Chicken Breast, cut in bite size pieces and rinse and dried with paper towel

Cook chicken in a pre- heated cast iron skillet with 3 tablespoons of extra light Olive Oil until Browned and no longer pink. Then add the following and cook a couple more minutes.

*4 tablespoons Soy Sauce
*4 tablespoons Onions, minced
*2 Cloves of Garlic, minced
*1/4 teaspoon Red Pepper Flakes, more if you like it hot
*Salt & Pepper to taste
*Optional: 1/4 cup of Stir Fry Sauce of your choice, right before serving

*1/2 Cup Cashew Pieces, add right before serving on a large piece of Lettuce of your Choice.

*6-8 Butter Crunch Lettuce leaves (my favorite) or you can use Iceberg Lettuce leaves washed and dried.

Optional: You can make White, Brown Rice or Fried Rice to add place on the lettuce leaf before adding warm Chicken.
