Strawberry Sweet Rolls

Roll Dough:

*1 cup warm Water
*2 1/2 teaspoons Active Dry Yeast
*1/2 teaspoon Granulated Sugar
*1/2 cup Milk, plus 2 tablespoons, warmed
*1/3 cup Granulated Sugar, plus 2 tablespoons
*1/2 tablespoon Sea Salt
*6 tablespoons Butter Flavored Shortening, melted
*2 Eggs
*3 cups Bread Flour
*3 1/4 White Wheat Flour, added gradually
In a 4 cup glass measuring cup add the warm water, yeast and 1/2 teaspoon sugar and let sit until bubbly.

In a sauce pan heat the milk until warm and add the shortening and let melt and then add the salt.

Then in a stand mixer add the sugar and eggs on low speed mix just until combined then add the warm milk mixture. On low speed gradually add the 3 cups of flour. Now, Pour in the yeast mixture and then gradually add the remaining flour until it forms a soft dough. Knead dough mixture with the dough hook about 8 minutes on medium speed, adding extra flour if needed to form a slightly sticky dough ball.

Remove the bowl with dough and cover with a moist flour sack towel and let rise until double in bulk, about 1-1/2 hours.
After rising divide the dough in half and roll dough into a rectangular shape.

Spread on strawberry filling leaving about two inches around the edges free from strawberry filling. Now roll-up starting on one of the long sides of the rectangular making a log shape. Using dental floss (about 16 inches) slide the dental floss under neath the dough roll positioning it, to cut, through the dough into into 1 inch slices by crossing floss over pulling outward both ends making a sweet roll slice, repeat-see below pictures. Place them in a baking dishes of your choice baking dishes sprayed with cooking spray.

Bake in a 350* F. oven for 20-30 minutes

Strawberry Filling:

*1 pound Strawberries, washed, dried and cut into small pieces
*2/3 cup Granulated Sugar
*4 tablespoons Cornstarch
*1/2 teaspoon Almond Extract
*
In a sauce pan on medium heat add the strawberries and cook for 7-8 minutes until juices release. Then mix together the cornstarch and sugar in a bowl and slowly add to the strawberry mixture until it thickens about 2-3 minutes. Remove the pan from heat and allow to cool (add almond extract) completely by chilling in the fridge while you wait for the dough to rise.

Drizzle cooled baked strawberry sweet rolls with powdered sugar glaze.
Powdered Sugar Glaze /Frosting

In Bowl Mix:
*
*4 tablespoons melted Butter
*2 Cups Powdered Sugar
*4-6 tablespoons Milk or Water add more or less as needed
*2 teaspoon Vanilla
*pinch of Sea Salt
*
Mix the above glaze ingredients in a bowl until slightly runny and drizzle over Strawberry Rolls.
