Garlic Bread Dots/Monkey Bread

Garlic Bread Dots

* 1 1/2 cups warm water
* 1 Tablespoon instant yeast

Stir together in bowl and set aside to foam.

* 3 1/2 cups flour of your choice. Add more flour as needed.
* 2 tablespoon sugar
* 1/2 teaspoon salt

Mix together the flour mixture with yeast mixture.

Knead 10 minutes. Set aside and cover with slightly moist cloth. Let rise until double in bulk, about 1 hour.

Roll out in a rectangular shape. Using a plastic pizza cutter, cut into
2 x 2 inch squares or larger (I’m not that picky about the size) and pinch into ball shapes.

Garlic Butter

*1/2 cup Butter, melted
*1 1/2 tablespoons dried Parsley Flakes
*1/4 cup freshly grated Parmesan Cheese
*1/8-1/4 teaspoon Garlic Powder, to taste
*1 teaspoon bottled Minced Garlic, (Pampa)

Combine the above ingredients and Roll dough balls into garlic butter.
Place dipped balls in a pile onto Silpat covered1/2 baking sheet.

Bake garlic bread dots/monkey bread in the oven at 350*F. for 20-25 minutes.

Dipping Sauce

*Extra Light Olive Oil
*Soy Sauce
*Fresh toasted minced Garlic bits, optional

To toast Garlic:

In a small frying pan on medium heat add a small (about 2 teaspoons) amount of Extra Light Olive Oil add minced fresh garlic and toast just until it starts to turn brown, being careful not to burn garlic.

Combine equal parts of Extra Light Olive Oil, Soy Sauce and garlic if desired. Serve in small bowl next to garlic balls dip and enjoy!

Beehive Apple Cider Pretzel Bread

This recipe is best when eaten freshly baked right out of the oven. It is good bread for cheese Fondue also. When Halloween comes around, we use this recipe for our “Cider Spiders”. We will be making these this year and they are so cute. So be sure to come back and check them out!

Apple Cider Pretzel Bread

Yeast proofing:

*1 and 1/3 cups warm Apple Cider (105-115* F.)
*2 tablespoons Instant Yeast
*1/8 teaspoon Sugar

Combine in a mixing bowl of a stand mixer and let rise until bubbly and add to the following:

*2 tablespoons Granulated Sugar

*4 cups All-purpose Flour

*2 teaspoon Salt

*1/2 cup Butter, room temperature

Combine the above Ingredients, using a dough hook with stand mixer on medium speed.   Knead 6 to 8 minutes and then cover with moist tea towel and let rise until double in size. Divide the dough into 2 balls, roll out each ball with your hands into a long snake/ropes the same in length and braid and shape into a beehive shape winding around, large at the bottom and smaller towards the top.

Egg Wash

*1 Egg
*1 tablespoon Water

Whisk together the water and egg and brush to the top of the bread dough right before baking. Top with Poppy Seeds if desired.

Bake in a 400*F. 45-50 minutes
