Pancake Cake
*2 Boxes White Cake Mixes, make according to directions
*8 Pie Pans, (9 inch) We got ours at the dollar store
*Parchment Paper and Pam Cooking Spray, cut circles of parchment to fit the bottom of pie pans
Cake Instructions:
Preheat oven 350*F. Bake for 8 to 10 minutes or until they are golden brown on the edges
Divide the cake batter evenly between prepared pie pans. Bake 2 pans at a time in the oven.
Allow the cakes to cool about 10 minutes and remove for pie pans and cool on cooling rack. Pipe the frosting, adding frosting in-between each layer of cake as you stack them. making the slightly thicker part of the frosting on the edges. Note: You can use a dowel down the center of the cake, just make sure it is not to long as-to poke out the top. This will make astraighter cake. *Note: We didn’t use a dowel.
Purchased Cream Cheese or Vanilla Frosting
*2 tubs (16 ounce each) of Cream Cheese Frosting, whipped 3-minutes on medium speed or until light and fluffy. Set aside, used for middle layers of the cake
Homemade Buttercream Frosting/Whipped Topping
*1 ½ cups Butter, softened (can use ½ butter flavored shortening and ½ butter)
*4 cups Powder Sugar, more if needed for a slightly stiff consistency
*2 tablespoons Heavy Cream, or as needed for desired consistency
*1 tablespoon Vanilla Extract
*pinch Sea Salt
*Piping bag with star tip, for piping on frosting/whippedtopping
Homemade Buttercream Frosting Instructions:
In a mixing bowl, using a hand mixer on medium-low speed, add the butter and beat until creamy. Then add the powder sugar 1 cup at a time starting on a low speed, adding slowly. When incorporated add heavy cream, vanilla and salt, adding more cream as needed for piping or frosting consistency.
If you wish to have all homemade buttercream double the frosting recipe, minus using the tubs of frosting.
Glaze and Sprinkles:
*1/2 cup Powder Sugar *Water, add a small amount at a time to get a semi-white/semi-thick glaze for drizzling for syrup dripping look. Use a spoon or dripping bottle with tip, start along the edge of decorated pancake cake and allow the glaze to drip down the side of the cake as desired. Drizzle glaze back and forth across the top cake, like you would syrup or as desired. Then sprinkle with sprinkle colors of your choice.
