Dark Chocolate Cake

Dark Chocolate  Cake

Cream together:

*3/4 cup Butter, at room temperature
*2/3 cup Granulated Sugar
*2 large Eggs
*2/3 cup Brown Sugar, packed
*2 teaspoons Vanilla

Add:

*1 cup Buttermilk, I used powder Buttermilk reconstituted
*1/2 cup Sour Cream, at room temperature
*2 tablespoons Water

Sift the following and then add to the above wet ingredients:

*1 3/4 cup All-Purpose Flour
*1 cup Hershey’s Special Dark Chocolate Powder

*1/2 teaspoon Kosher Salt
*1 1/2 teaspoons Baking Soda

Mix in a stand mixer all the above ingredients until well combined.  (I used a 1/2 baking sheet lined with sprayed parchment paper) Fill baking sheet three fourths full. Bake the sheet cake in a pre-heated oven at 350*F. for 18-20 minutes. Cool completely before cutting round circles with cookie cutter.  This recipe can also make 24 cupcakes, but it will depend on how full you fill each cupcake cup/liner with the batter.

Strawberry Chocolate Cake Towers

  • 20 Strawberries, sliced, some whole for the topping
  • Dark Chocolate Cake Circles
  • Whipped Cream or 8 ounce Cool Whip Topping
  • Hershey’s Chocolate Syrup or Ganache
  • Dessert glasses or Jars, we used 8 ounce Ice-cream dessert glasses

Start with layering in glass jars:  sliced strawberries, cake circles and whipped cream/topping.  Repeat and top with whipped cream/topping.  Drizzle with chocolate and top with strawberry and dazzle more chocolate if desired.

We made 8 strawberry Chocolate Cake Towers.

Owl Cake, Cupcakes and Cookie Monster Ice Cream 

Owl Cake, Cupcakes and Cookie Monster Ice Cream

Jessica’s Birthday was Yesterday, Jamie made the cake, cupcakes and decorated the owl cake.  Jacque decorated the owl cupcakes and made the Cookie Monster Ice Cream.

Owl Cake

*2 Yellow Cake Mix, made according to directions on box, using cake pan sizes below

*1   16 ounce container Lemon Frosting

*1   16 ounce container Chocolate Frosting

We used two 4 Inch cake pans for the eyes and two 6 inch cake pans, one for the body and the other for wings, feet and ears.  Fill each cake pan 2/3 full of the batter. Bake cake according to directions. See the above link if you need directions to cut out shapes.

Note:  We made cupcakes with the leftover batter.

We made 12 cupcakes, using the leftover batter from making the owl cake.

Owl Cupcakes

*12 cupcakes

*1 container Cream Cheese Frosting colored Blue or use the leftover frosting from owl cake, Brown or Yellow Frosting

*Oreo Cookies or chocolate cookie sandwiches

*Reeses Pieces, for Brown eyeballs and Orange for beak, attaching them with frosting.  Frost and decorate.  See pictures.

 

 

Cookie Monster Ice Cream

  

Cookie Monster Ice Cream

*2 cups Heavy Cream, chilled and whipped to stiff peaks
*1 package 8 ounce Cream a Cheese, softened
*1/2 can Sweetened Condensed Milk, chilled
*8-10 Chewy Chips Ahoy Cookies, broken into pieces
*8-10 Oreo Cookies or chocolate sandwich cookie, broken into pieces
*Blue Food Coloring Paste, about 1/4 teaspoon
*Metal mixing bowl, chilled
*Hand Mixer, Beaters chilled
*Freezer Safe Containers  (2 Bread Pans and etc…)

Method:
*
In chilled bowl, whip with chilled beaters the heavy cream into stiff peaks.
*
In a separate mixing bowl combine cream cheese and sweetened condensed milk and blue food coloring, beat until smooth.  
*
Then combine together by folding the cream cheese mixture into the whipped cream and then fold in the cookies.
*
Freeze in the freezer the Cookie Monster cream in freezer containers for 4-6 hours.
*
Scoop and enjoy!
