No-Bake Oatmeal Truffles

This recipe is a twist on the no-bake oatmeal cookies for an extra chocolate taste for a holiday treat.

Note: You may want to cut this recipe in half, it makes about 30 truffles and you need to work quickly in rolling them into truffle balls.

No-Bake Oatmeal Truffles

*2 cups sugar
*1/4 cup powder baking cocoa
*Pinch of salt

Put in a stock pot the above ingredients and whisk together.

Add:

*1 stick of butter
*1/2 cup milk of your choice I use skim milk

Turn on the stove to medium heat and bring to a boil for two minutes stirring while it boils. Remove from heat.

Add:

*3/4 cup chunky or smooth peanut butter
*1 teaspoon of vanilla

Note: I added a 1/4 cup more of the peanut butter than the original recipe asks for which was 1/2 cup of the peanut butter. (I added more to help keep the nests together.) *

*1 1/2 cups old fashion oatmeal
*1 1/2 cups quick cooking oatmeal
*1-2 tablespoons Flax Seed, optional

Add oatmeal to chocolate mixture into the stock pot and mix well.

Cool mixture just until you can handle mixture and roll mixture into 1 tablespoon sized round balls.

Dipping Truffles

Dip balls into dipping chocolate or almond Bark or with chocolate chips (If using Chocolate chips, melt 1 tablespoon of shortening to each cup of chocolate chips that you use when melting to dip Truffle balls.)

Caramel Drizzle

Melt about 8 fresh/soft Kraft caramel squares in a microwaveable cup in the microwave adding 1 teaspoon of water, more if needed to make it smooth enough to drizzle over dipped no-bake oatmeal balls/truffles.

Chocolate Peanut Clusters

I know these are super simple but we really like them. You can use dark or milk chocolate and make them for a quick gift or treat for any Holiday!

Chocolate Peanut Clusters

*Unsalted Dry Roasted Peanuts, add as many as desired, I used about 1 1/2 cups
*Good Quality Chocolate Dipping Chocolate or Milk, Dark Chocolate chips, I used 11.5 ounce package Milk Chocolate Chips
*1 tablespoon Shortening to one cup of chocolate chips, used only when melting chocolate chips

Melt your choice of the above chocolates in the microwave in 30 second intervals until chocolate is melted and add as many
Peanuts as desired to melted chocolate, making sure peanuts are coated. Using a tablespoon to scoop mixture onto wax paper and allow peanut clusters to set. Plate or Package them for gifts or enjoy eating them.
