No Bake Oatmeal Coconut Bites

Ingredients:

*1/2 cup Sugar 

*3 tablespoons unsweetened Almond Milk

*3 tablespoons Vegan Butter, like Earth Balance Vegan Buttery Sticks or try Extra Light Olive

*2 tablespoons Cacao Powder

*1/3 cup Powdered Peanut Butter

*1/4 cup Shredded Coconut

*1 cup Old Fashion Rolled Oats

*1 teaspoon Vanilla Extract

*Pinch Sea Salt

In a saucepan add sugar, almond milk, butter/ olive oil and cacao powder and bring to a boil and boil 1-2 minutes.  Remove from heat and add peanut butter, coconut, oats, vanilla and salt.  Then using a 1 tablespoon cookie scoop, scoop onto a Silpat or wax paper and allow to set and enjoy! 

Note: I have substituted some of the sugar to maple syrup (1/4 cup sugar and 1/4 maple syrup) and added 1/4 cup quick oats. Makes 15-17 No bake oatmeal coconut bites, around 100 calories each.

store in an airtight container.

Healthy Oatmeal Breakfast Bars

Ingredients:

*2 ripe Bananas, peeled and mashed

*1/2 cup any Nut Butter, I used Almond

*1/4 cup Pure Maple Syrup

*1/8 teaspoon Cinnamon, like Ceylon Cinnamon

*Pinch of Pink Himalayan Salt, literally

*1 teaspoon Vanilla Extract

*1 and 1/2 cups Old Fashion Rolled Oats

*1/2 cup Quick Oats

*1/2 to 3/4 cup Chocolate Chips, I like the dark

Instructions:

Mash bananas in a bowl then add maple syrup, nut butter, vanilla and salt, stir together.  Add the oats and chocolate chips, saving a few chips for topping if desired.  Stir together until all ingredients are incorporated.

Scoop and spread mixture level into parchment lined square pan or 2.2 quart oblong pan.

Bake at 350*F.  for 15-25 minutes, depending on how moist you like them and size of bananas.  I cooked mine the whole 25 minutes.
