Pineapple Macadamia Nut Cookies

*1/2 cup Butter, room temperature

*1/2 cup Brown Sugar

*1/2 cup granulated Sugar

*1 Egg, room temperature

*1 tablespoon Vanilla Extract

*1/2 teaspoon Almond Extract

*2 cups All-purpose Flour, sifted

*1/2 teaspoon Baking Soda

*1/2 teaspoon Sea Salt

*1 cup White Chocolate Chips

*1/4 cup Dried Coconut Chunks, chopped

*1/4 cup Dried Pineapple Chunks, chopped

*1 and 1/2 cups Macadamia Nuts, chopped

In a stand mixer with paddle attachment on medium low speed or by hand, cream together the butter, brown sugar and granulated sugar.

Add to the creamed mixture the egg, vanilla extract and almond extract. Mix just until combined.
In a mixing bowl sift the dry ingredients: Flour, baking soda and salt.

Slowly add the dry mixture into the wet mixture just until combined. Remove from mixer and add: White chocolate chips, coconut, pineapple, macadamia nuts and stir them in to cookie dough.

Refrigerate cookie dough for 2 hours and scoop cookies onto a Silpat covered 1/2 baking sheet.

Bake the cookies in a pre-heated 375* F. oven for 8-10 minutes or edges barely turn golden brown.

Makes around 34 cookies, using 2 tablespoon Cookie Scoop

Note: In the below picture is a bottle of Butter Rum Flavoring which is not in this recipe!

Easy Spice Mix Banana Chocolate Chip Cookies

*1 (15.25 ounce) box Spice Cake Mix, like Betty Crocker Super Moist

*3 medium size Bananas, peeled and blended

*1/2 cup Dark Chocolate Chips, like Guittard, more chips if desired, added to the top of cookies after baking

*1/2 cup Ghirardelli Chocolate Classic White Chips or Strained Greek Yogurt Flavored Drops, more chips if desired, added to the top of the cookies after baking

Stir together the spice cake mix and bananas until combined.

Then add and stir in the dark and white chocolate chips

*

Scoop out cookie batter, about 2 tablespoons of the cookie batter (per cookie) onto a Silpat (baking mat) or parchment paper,  on half baking sheet.

Bake in a preheated oven at 350*F. for 12 to 14 minutes

Allow cookies to cool on baking sheet before removing.

Makes around 12 to 17 cookies, depending on the size of cookies
