Fresh Chunky Salsa

*1 can 28 ounce can Diced Tomatoes

*3 cans 10 ounce Tomatoes with Green Chilies

*1 to 2 Jalapeños, chopped, leave seeds in for extra heat

*1/2 White Onion, chopped

*1/4 cup Cilantro, chopped or torn

*2 Cloves of Garlic, Pressed

*1 teaspoon Cumin

*1/2 teaspoon Sea Salt, or to taste

*1 teaspoon Fresh Ground Black Pepper

*1 tablespoon Fresh Lime Juice

*1/2 teaspoon Sugar or Honey

In a medium bowl add; tomatoes, tomatoes with green Chilies, Jalapeños, white onions, cilantro and garlic.  Then add the spices cumin, salt and pepper

Fresh Mango Salsa

Fresh Mango Salsa

*3 Fresh e, peeled and diced, discard core

*1 to 2 Jalapeños, small dice

*1/4 cup minced Red Onion

*1 medium Red Bell Pepper, diced

*1/4 cup Cilantro, roughly chopped or torn

*2 tablespoons Honey

*Juice of 1 Lime

*Sea Salt, to taste

*Blue Tortillas

In a medium mixing bowl, add and stir to combine the: Mangoes, jalapeños, onion, red bell pepper, cilantro, honey, lime and salt. Toss together and place in the fridge to marinate for at least 20 minutes. Then serve with blue tortillas.
