Sliders with Vegan Meatballs

OR

Air Fryer Italian Meatless Meatball Sandwich

Makes 27 to 28 meatless meatballs, using a 2 tablespoon cookie scoop

Makes 8 to 9 meatless meatball sandwiches, with 3 meatless meatballs each

Special Equipment Needed:

**Food Processor and **Air Fryer

Ingredients:

*1 and 1/2 cups Sliced Almonds

*2 teaspoons Bottled minced Garlic

*1 cup Breadcrumbs, like Panko

*1 cup shredded Parmesan Cheese

*1 teaspoon dried Oregano

*2 teaspoons dried Parsley

*Fresh Ground Black Pepper, to taste

*Sea Salt, to taste

*2 large Eggs or you could try 6 Tablespoons canned Garbanzo Bean Juice/Aquafaba

*1 Jar 24 ounce Prego Traditional Spaghetti Sauce or your favorite Marinara Sauce

*Slices of Mozzarella or Provolone or cheese of your choice

*Basil Leaves or Butter Crunch Lettuce

*Onion Rolls, toasted, 8 to 9 rolls, depending on how many meatless meatballs, per sandwich

Instructions:

Pulse 3 to 4 times in a food processor the slice almonds. Then add: Garlic, breadcrumbs, Parmesan cheese, oregano, parsley, black pepper and salt. Pulse in the food processor until coarse and starts to come together. Scoop out mixture and form into balls and place on a baking sheet until all mixture is scooped.

In an air fryer, air fry 7 meatless meatballs in air fryer or according to directions of your air fryer. I set mine on the fish setting and 380*F. for 6 minutes. Test with your first batch of meatless meatballs, then adjust cooking time as needed, yours may need less time.

In a skillet add the tomato sauce and the Air fried meatless meatballs, on medium-low heat and bring to a simmer and heat until mixture heated through. Then add to the sandwich on top of cheese slice as instructed below.

Slice onion rolls in half and brush on extra light olive oil or use butter, spread to the inside of each cut side edge coating to the edge of each sliced roll. Then Broil in the oven on high on baking sheet, watching carefully until toasted. Repeat for each roll.

Add a slice of cheese to the bottom side of the roll and add the meatless meatballs with the tomato sauce and top with Basil Leaves. Add the roll top and serve immediately. Repeat for each sandwich.

Oatmeal Peanut Butter Cookies

Oatmeal Peanut Butter Cookies

**Makes 24 cookies (2 tablespoon scoop)

**Preheat oven 350*F.

Ingredients:

*1/2 cup Butter, room temperature

*1/2 cup Extra Light Olive Oil

*1 cup Brown Sugar

*1/2 cup Granulated Sugar

*1 cup Powdered Peanut Butter

*2 Eggs, room temperature

*3/4 cup White Wheat Pastry Flour

*1/2 cup All-purpose Flour

*1 teaspoon Baking Powder

*1 teaspoon Baking Powder

*1 teaspoon Kosher Salt

*1 cup Old Fashion Oats

*1 cup Quick Oats

*Ghirardelli Bittersweet Chocolate Chips, to taste

Directions:

In a stand mixer on medium-low or I like to stir by hand, cream together the butter, olive oil, brown sugar and sugar. Stir in peanut butter and then add eggs mixing in one at time until incorporated.

Sift together in a bowl the wheat flour, flour, baking powder, baking soda and salt. (I usually like sea salt over kosher salt but for this recipe I would stick to kosher salt)

Add flour in thirds into the creamed mixture just until flour is completely incorporated.

Stir in oats and chocolate chips. Note: I add the chocolate chips just to the tops of some of the cookies and left the others plain. I like to scoop all the dough onto a Silpat lined baking sheet. Makes 24 (2 tablespoons scoops).

Refrigerate the cookie dough at least 30 minutes before baking.

Bake cookies for 12 to 14 minutes. Allow cookies to cool on baking sheet for 30 minutes before removing from baking sheet.

These are a soft and chewy cookie.
