Peanut Butter Popcorn

*6 cups air-popped Popcorn

*2/3 cup Brown Sugar

*2/3 cup Light Corn Syrup

*1 teaspoon Sea Salt

*3 tablespoons Butter

*2 cups Creamy Peanut Butter

*2 cups Rice Krispies, like Kellogg’s

*1 cup mini Chocolate Chips, optional

Candy Add In’s:

*1 large Twix Candy Bar, cut in bite size pieces

*1 large Kit Kat Candy Bar, cut in bite size pieces

*1 large Reese’s Peanut Butter Cups, cut into bite size pieces

*1 cup mini Chocolate Chips, optional

Instructions:

Preheat Oven 250*F.

*1/2 baking sheet with Silpat or parchment paper cut to fit the bottom of baking sheet.

*In a large mixing bowl sprayed with cooking spray add the popped popcorn.

Peanut Butter Coating

In a heavy-duty medium sauce pan add: Brown sugar, corn syrup, butter and sea salt. Turn on medium heat and bring to a boil for 3 minutes. Remove from heat and  mix in the peanut butter until combined.

Pour warm mixture evenly over the popped corn. Stir with wooden spoon or silicone spatula.

Then add the rice cereal, mix until almost all popcorn and rice cereal are coated.

Place popcorn mixture and spread evenly on baking sheet in the oven for 3 (15 minute) intervals stirring between each interval. Remove from the oven and let cool slightly and then top with candy of your choice.

Stir lightly and allow popcorn mixture to cool and set.

Store in an airtight container for 1 week.

*4 small bottles or 40 ounces Cranberry Juice, (like Oceanspray) chilled

*1 can (46 ounce) Pineapple Juice, (like Dole) chilled

*1/2 tablespoon Almond Extract

*2 liters Ginger ale, chilled

*2 cups Fresh Cranberries, for garnish in large serving container

*3 Fresh Limes, quarter, for garnish in large serving container

*Crushed Ice, for serving

Add the above ingredients to serving container, adding the ice to container or individual glasses.
