Baked Potato Bar

 

*Baked Russet Potatoes or Potatoes of your choice
Suggested Potato Bar Toppings:
 *
*Bacon, pre-cooked, roughly chopped
*Deli Ham slices, cut in squares
*Red Onion, minced
*Black Olives, sliced
*Ham, cut in squares
*Deli Turkey slices, cut in squares
*Medium Cheddar Cheese, grated
*Butter
*Sour Cream
*Greek Yogurt
*Chives
Bake the washed potatoes in a foil covering in 425*F oven for 1-2 hours (or until fork pokes through easily) depending on size of Potato type and size OR cook in a crock-pot on low 4-6 hours depending on how many potatoes you use and the size.

We served 7, one potato each, using  8 ounce cups heaped with toppings.

Potato Salad Bar 

 

Do you have picky eaters at your house?  Then this potato salad bar will be just what you want to make and let everyone add the toppings they like, add more toppings/ingredients that your family enjoys!

Potato Salad Bar

*5 medium large Potatoes (Russets (white) or Yukon Gold or Red Pontiac or etc…) cooked in stock pot water, water covering potatoes, cooked on medium heat until firm but tender, cut into square chunks or as desired
Dressing:
*1/2 cup Plain Greek Yogurt or Olive Oil Mayonnaise
*1/2 cup Olive Oil Mayonnaise, more if desired
*1 tablespoon Honey or Sugar
*1-2 Tablespoons Yellow Mustard, optional
*2 tablespoons Pickle Relish
*Canned Evaporated Milk, use for desired consistency  of the dressing
*Sea Salt and Freshly Ground Pepper, to taste
Mix together dressing in a large bowl until combined.  Then add potatoes,  adding milk as needed.
Suggested Salad Bar Toppings:
*Bacon, pre-cooked, roughly chopped
*Deli Ham slices, cut in squares
*Red Onion, minced
*Black Olives, sliced
*Eggs, diced
*Deli Turkey slices, cut in squares
*Medium Cheddar Cheese, cubed small
Place each topping in a container of choice.  Set up on table as desired.
