Potato Soup Crock Pot Style

Sauté the following in 2-3 Tablespoons of Light Olive Oil or Butter:

*1 medium Onion, finely chopped
*1 cup Baby Carrots, sliced or diced
*3-4 small Stalks of Celery, finely chopped

Add 2 Cloves of Garlic, minced or pressed, add at the end of sautéing process to the above ingredients.

In a bowl of Water:

*7 medium Potatoes, cleaned, peeled and cut in bite size pieces

Allow the cut pieces of Potato to sit in water 15 minutes or longer to remove some of the starch. Then drain and add to Crock Pot.

In Medium Crock Pot add:

*32-40 ounces Vegetable or Chicken Stock, Potatoes and Sautéed Ingredients (I used the 40 ounces for a thinner soup.)

Add Salt and Pepper to taste.

Cook in Crock Pot on low 5-6 hours depending on your Crock Pot instructions.

After cooking soup in crock pot, use a Immersion Blender; blend 2 cups of the warm Soup. (I blended one cup of soup at a time.) Then add the blended soup back to the Crock Pot of soup, this helps with the thickness of the soup.

***Optional: Add one cup of Shredded Mozzarella or Parmesan Cheese (blending with the above 2 cups of soup) and let cook until cheese is melted in well. Add 1 cup of cream or let your guests add their own cream.

Serve in bowls and top with Bacon Bits and Shredded Mozzarella or Parmesan Cheese.

Chocolate Oreo and Rolo Cookies

These are favorite cookies that most people like so make some and take them to your next family get together or work party.

*Here is a yummy cookie recipe for Chocolate Cookies if you want to make them homemade.

Easy Chocolate Oreo Cookies

Whisk together cake mix and flour.

*1 box Devil’s Food Cake Mix, brand of your choice, I recommend not using super moist Devil’s Food cake mix the batter is to sticky and you will have to add 8 to 10 tablespoons of Flour.
*2 tablespoons Flour

Whisk together eggs, water and extra light olive oil.

*2 Eggs
*2 tablespoons Water, add more only if needed
*2 tablespoons Extra Light Olive Oil or 2 tablespoons Butter Flavored Shortening, if you use shortening don’t whisk with eggs and water

Combine the dry and wet ingredients and mix together. Roll into 1 to 1 1/2 inch balls so that they are as close to the same size as possible. Place round cookie balls onto cookie sheet and press slightly flat. Bake the cookies at 350*F for about 10 minutes or until tops start to crack. Remove cookies from the oven and tap pan on the counter to flatten cookies. Cool cookies and frost with a Cream Cheese Frosting, frosting the bottom of one cookie and add another cookie making a sandwich/Oreo Cookie with a cream cheese frosting.

Easy Rolo Cookies

*1 box Devil’s Food Cake mix, WF brand worked well
*2 Eggs
*1/4-1/3 cup Extra Light Olive Oil

*Rolos, foil removed, wrapped inside cookie dough making a ball

Mix together the above ingredients and form into balls and then flatten them using enough cookie dough for each cookie to cover the Rolo. Place on a cookie sheet, I like using Silpat and bake at 350*F for 7-10 minutes.
