Harvest Sweet Chex Mix

Sweet Sauce/Coating:

*3/4 cup Butter or Plant Based Olive Oil Butter

*3/4 cup Brown Sugar

*1 tablespoon Vanilla Extract

Chex Mix:

*2 cups Wheat Chex Mix

*6 cups Corn Chex Mix

*3 cups Rice Chex Mix

*1 cup Golden Graham’s

Mix-in Options:

*1 cup Salted Peanuts

*1 cup Bugles

*1 cup Round Pretzels

*1/2 cup Harvest Candy Corns

*1/2 cup Reese’s Pieces

*Any other Mix-in’s desired

Instructions:

Preheat oven to 275*F.

In heavy duty saucepan or Stainless Steel saucepan. Add the butter and brown sugar, on medium heat, bring to a boil and boil 2 minutes.

In a extra large mixing bowl add the variety’s of Chex mix, toss together. Then pour/drizzle the sweet sauce, drizzle the sauce in thirds on the chex mix, stirring between each drizzling, toss together to coat all of the Chex mix. Then using a half baking sheet with Silpat or Parchment Paper. Spread mixture evenly on baking sheet and bake for 45 minutes, stirring every 15 minutes.

Remove from oven and allow to cool completely and then toss in desired mix-in’s.

Store in an airtight container for up to a week. Great snack for Thanksgiving while guest wait for the big meal!!!

Chocolate Football Peanut Butter Stuffed Pretzel Bites

* Peanut Butter Stuffed/Filled Pretzel Nuggets, like Great Value or Members Mark

*Chocolate Melting Wafers, melted we used Ghirardelli Dark melting Wafers, follow directions on package. Note: Melt 1 cup of wafers at a time and add 1/4 teaspoon of Coconut Oil.

*1 (16 ounce) container Cream Cheese Frosting, like Betty Crocker Note: You will only use a very small amount

Directions:

I like to melt 1 cup of the wafers at a time in glass Pyrex measuring cup in the microwave in 30 second increments. Melt until almost all wafers are melted then stir in coconut oil and stir until chocolate is melted and smooth. Using the 1 cup measuring cup makes it easy to dip football shaped pretzels. Drop in 1 pretzel at a time flip over the pretzel using a fork until covered with chocolate. Tap off any excess chocolate and scrape off the bottom of the fork on the side of the cup before sliding the pretzel onto a Silpat or parchment covered 1/2 baking sheet. Repeat for each football pretzel and allow dipped pretzels to set completely before piping on the football laces.

For the laces, use a pastry bag with small round tip and fill with the frosting. Pipe on laces as desired. Repeat for each dipped pretzel football bite.

Note: Repeat 1 cup melting process, dipping and adding laces until the desired number of footballs is achieved.
