S’mores Butter Caramel Popcorn

S’mores Butter Caramel Corn

*24 cups Popped Popcorn

*3 cups Golden Grahams

*3 cups Miniature Marshmallows

*3/4 cup Dark Chocolate Melting Wafers, melted according to package directions, for drizzling over Popcorn mixture

Butter Caramel Coating

*1 cup Butter

*1 and 1/3 cups Sugar

*1/2 cup Light Karo Syrup

*1 teaspoon Vanilla Extract

*1 teaspoon Baking Soda

In a medium Saucepan on medium-heat add the butter, sugar and Karo syrup, bring to a boil and boil for 3 to 4 minutes. Remove pan from the heat and add the vanilla and then 1 teaspoon of baking soda which will make the mixture bubble up!

In a Extra Large Bowl add the popped popcorn and add 1/2 of the warm butter caramel mixture by drizzling over the popcorn, stirring carefully then add the remaining popcorn and butter caramel mixture. Stirring carefully until coating is covered evenly. Then add the Golden Grahams and marshmallows and toss/stir together until coated.

Spread Popcorn mixture onto 3 half baking sheets coved with Silpat baking mats or parchment paper. Then drizzle over the top or the melted chocolate wafers

Oreo Popcorn

Oreo Popcorn

*12 cups Popped Air Popped Popcorn, removing all un-popped kernels

*1 cup Vanilla Melting Wafers

*2 teaspoons White Shortening

*12  to 14 Oreo Cookies, cream centers removed and discarded and chopped into small pieces

On medium-low heat, In a double boiler, made by placing a small glass bowl on top of a sauce pan that has about 2 inches of water add to it, then making sure that the bottom of the bowl doesn’t touch the water.

Add the melting wafers and shortening to the double boiler bowl and stir with a heat-resistant rubber scraper, until almost melted then turn of the heat and stir until completely melted.

In an extra-large bowl add 1/2 of the popcorn and pour 1/2 of the melted wafers by drizzling it on top of the popcorn and stir. Then add remaining popcorn, melted wafers and stir in the chopped Oreo cookies along with the cookie crumbs. Stir until popcorn and Oreos are equally coated.

Spread out the popcorn mixture onto 2 (1/2 baking sheets) lined with Silpats or wax paper (for easy removal) allow the popcorn mixture to dry/set.

Enjoy or store completely set popcorn in an airtight container, I’ve stored it up to 3 to 4 days.
