Halloween Garlic Rotini Salad

*1 Box (16 ounce) Garden Rotini or Tri-Color Rotini (12 ounce), cooked according to directions on box

*1 package (14 ounce) Edamame’s, frozen and cooked according to directions

*1 can (6 ounce) Small Black Olives, drained

*1 small Jar Pimiento Stuffed Green Olives, like Pearls 5.75 ounce, drained

*1/4 cup Freshly Grated Parmesan Cheese

*6 Cloves Garlic, minced

*2 tablespoons Extra Light Olive Oil

*2 tablespoons Butter

*Sea Salt and Fresh Ground Black Pepper, to taste

*Red Pepper Flakes, to taste

Sauté the minced Garlic in olive oil and butter for 1 to 2 minutes on medium low heat. Remove from heat and set aside.

Drain cooked rotini and add to large serving bowl. Then add the edamame’s, green olives, black olives, Parmesan cheese, garlic dressing and salt and pepper to taste. Serve

Greek Pasta Salad

*1 (16 ounce) package/box Rotini Pasta, Cooked el dente according to directions

*1 (6 ounce) can small or medium Black Olives, halved

*4 small Roma Tomatoes, diced

*2 medium Cucumbers, peeled, sliced and quartered (seeds removed)

*1/2 medium Red Onion, chopped

*1/2 cup Crumbled Feta Cheese and or Parmesan Cheese, grated

*Sea Salt and Freshly Ground Pepper, to taste

In a large salad/mixing bowl, add the above salad ingredients except the feta or Parmesan cheese. Toss together and pour dressing over pasta salad.

Dressing

*1/4 cup Red Wine Vinegar

*1/3 cup Extra Light Olive Oil

*1/2 teaspoon Garlic Powder

*1 teaspoon dried Oregano

*Pinch of Sugar

*Sea Salt and Fresh Ground Pepper, to taste

Combine dressing in a mason jar and shake to combine. Then pour over pasta salad. Refrigerate for at least 2 hours. Then add the feta or parmesan cheese just before serving. Enjoy!
