Shrimp or Grilled Chicken Pasta Salad

The 24th July was a very fun day for our family getting together and enjoying each other’s company. This is a recipe from our Pioneer Day/24th of July celebration in Utah.

Shrimp or Grilled Chicken Pasta Salad

Combine and toss together in large mixing bowl:

*1 4 ounce can Tiny Shrimp, drained or 1 package of Grilled Frozen Chicken warmed in a frying pan in 2 tablespoons of Extra Light Olive Oil, cut into bite size pieces
*1 12 ounce package Wacky Mac Vegetable Pasta or Wagon Wheel Pasta, cooked and rinsed and drained
*1 cup Frozen Peas, rinsed with hot water or Fresh Peas
*4-5 Bunching Onions, minced
*5 ounces Carrots, shredded or (1/2 bag Matchstick Carrots 10 ounce size)
*1/4 cup Basil, chopped
*1/4 cup Parmesan Cheese, shredded
*Optional: Hard Boiled Eggs, diced

Dressing

*3/4 cup Olive Oil Mayonnaise
*1/4 cup Vanilla Yogurt
*Salt and Pepper, to taste

Mix dressing in a separate bowl and add to the large bowl the above pasta salad. (We used this recipe for a pioneer dinner and served in mason jars.) Chill/refrigerate until ready to serve.

**Note: We doubled this recipe and made a grilled chicken pasta salad and a shrimp pasta salad to accommodate likes and dislikes in our family.

Golf Club Parfaits

We used these at our Father’s Day Dinner Party but you could make them for any occasion.

Golf Club Par-faits

*Champaign Glass, or glass of your choice
*Cantaloupe, I used a Melon Baller
*Watermelon, I used a Melon Baller
*Fresh Pineapple, cut into chunks
*Strawberries, sliced
*Sprite, or Lemon Soda of your choice, add just before serving
*Squirt Whipping Cream, Top just before serving

Layer the above in the order listed.

Serve.

Golf Club Par-fait Tags

Print out the tags, cut into circles and I laminated mine with contact paper. Then with a round medium hole punch a hole in top of the tag (I used black and white Bakers Twine, or Twine/ribbon of your choice), slip the twine through the hole and tie the tag to the glass.

Note: Use a glass that has some sort of rim so tag will stay up on the glass.
