Bacon Pasta Salad

Salad Ingredients:

*1 16 ounce package Rotini Noodles, cooked according to directions on package, pasta rinsed and drained
*10-12 strips cooked Bacon, Cut in bite size pieces
*1/4 cup Red Onion, diced
*1 bunch Broccoli,washed, stems removed and cut in bit size pieces
*3/4 cup thinly shredded Cheddar Cheese or Mozzarella Cheese

Toss together the above in bowl.

Dressing

*1 1/2 cups Plain Yogurt
*3/4 cup Olive Oil Mayonnaise
*1 teaspoon Vanilla
*2 packets Splenda or Sugar to taste
*Salt, to taste
*Pepper, to taste

Mix together dressing ingredients and add to the tossed salad ingredients, serve.

Italian Salad

Italian Salad

*1/2 Head of Iceberg Lettuce, chopped or 1/2 package (11 ounce package) Just lettuce
*1 package Spring Mix
*1 can Drained Artichoke Hearts, chopped
*1/2 Red Pepper, diced
*1/2 Green Pepper, diced
*1/2 cup fresh grated Parmesan Cheese
*1/2 cup Black Olives, chopped, optional
*1/4 White Onion Thinly Sliced

Toss together the above salad ingredients.

Dressing

*1/4 cup Red Wine Vinegar
*1 teaspoon Garlic Salt
*1 teaspoon freshly ground Black Pepper
*1 teaspoon dried freshly ground Italian Herb Seasoning
*1 tablespoon Honey
*1/4 cup Extra Light Olive Oil

Whisk together the above dressing ingredients until well incorporated, add dressing to salad ingredients just before serving. Keep salad and dressing refrigerated.
