Tomato Basil Pasta Salad

Ingredients:

*16 ounce Box Penne Pasta, cook according to directions, al dente

*1 can 12 ounce Black Olives, halved if desired

*2 Cloves Garlic, minced

*1/4 large Red Onion, minced

*12 Basil Leaves, chiffonade

*2-4 Roma Tomatoes, medium diced

*Juice of 1 Lemon

*1 tablespoon Extra Light Olive Oil

*Sea Salt and Fresh Ground Pepper, to taste

Directions:

In a large mixing bowl add: Pasta, olives, garlic, red onions, basil and tomatoes. Drizzle on the lemon juice and olive oil. Toss together. Season with salt and pepper, to taste. Serve.

Green Fruit Salad

Green Fruit Salad

*3 cold Green Apples, cut in bite size pieces

*4 cold Kiwi, peeled sliced and sliced again in half

*2 bunches of cold Green Grapes, washed 

*Juice and Zest of 1 Lime

*1/2 cup Sugar

*1/2 cup Water

Simple Syrup

In a sauce pan add the sugar and water, on medium heat, bring to a simmer and simmer until sugar has dissolved.  Then cool down in a cold water bath and when cooled add the lime zest and Juice.

In a large serving bowl add apples, kiwi and grapes.  Pour over the fruit the simple syrup mixture and stir to cover all the fruit.  Cover the bowl and refrigerate for at least 20 minutes to marinate.  Serve cold.
