Seasoned  Corn

*1  (15.25 ounce) can Corn, drained

*1 teaspoon finely chopped Red Onions

*1 teaspoon Extra Light Olive Oil

*1/4 teaspoon Garlic Salt

*Pinch of Red Pepper Flakes

*Fresh Ground Black Pepper, to taste

*Chopped Cilantro, as desired

In a bowl mix together the above ingredients, cover and refrigerate for 30 minutes to marinate the flavors. Serve with Carnitas (Warm tortillas, shredded pork, rice, corn and black beans.

Coconut Lime Rice

Coconut Lime Rice

*4 cups cooked Rice (Rice cooked with Lime juice and low-sodium chicken broth powder)

*3-4 tablespoons Coconut Syrup, Torani

*2 tablespoons chopped Cilantro

*Zest and Juice of 1 Lime, save half the juice for after rice is cooked then add

*2 teaspoons Chicken Broth Powder

*Sea Salt, to taste

Cook the rice in a rice cooker etc… adding 1/2 the lime juice and chicken broth powder, make according to directions on rice cooker or rice package.

After the rice has cooked add the coconut syrup, lime zest and cilantro and toss/mix together.
Serve
