Baked Potato Bar

 

*Baked Russet Potatoes or Potatoes of your choice
Suggested Potato Bar Toppings:
 *
*Bacon, pre-cooked, roughly chopped
*Deli Ham slices, cut in squares
*Red Onion, minced
*Black Olives, sliced
*Ham, cut in squares
*Deli Turkey slices, cut in squares
*Medium Cheddar Cheese, grated
*Butter
*Sour Cream
*Greek Yogurt
*Chives
Bake the washed potatoes in a foil covering in 425*F oven for 1-2 hours (or until fork pokes through easily) depending on size of Potato type and size OR cook in a crock-pot on low 4-6 hours depending on how many potatoes you use and the size.

We served 7, one potato each, using  8 ounce cups heaped with toppings.

BBQ Wings Crock Pot Style

*5 pounds Frozen Chicken Wings/Drumettes, thaw in refrigerator
*1/3 cup Brown Sugar
*1 cup Baby Rays Barbecue Sauce
*2   12 ounce bottles IBC Root Beer

Combine in a small mixing bowl the root beer, brown sugar and barbecue sauce.

In a crock pot add the chicken wings (use a crock pot disposable liner for easy clean-up).  Use 1/2  of the BBQ mixtures and pour on top of the frozen chicken wings. Cook on High for 5 1/2 hours or until thoroughly cooked, but not falling apart. (Keep the remaining half of the sauce in the fridge until ready to baste crock pot cooked chicken wings.)

Remove cooked wings from crock pot and place them one at a time onto 2 – half baking sheets with parchment paper or aluminum foil (for easy clean-up).

Baste/brush the chicken wings with some of the reserved BBQ sauce, bake in a pre-heated 400* F. oven for 8-10 minutes.  Then remove the wings from the oven and baste again with the BBQ sauce and bake for another 6 minutes, repeat again for another 6 minutes.

Remove wings from oven and place them back into the crock pot on warm until ready to serve.  Note:  If you choose to keep the wings warm in the crock pot make sure to remove any  remaining liquid before adding the sticky chicken wings back to the crock pot.  Then add any remaining BBQ basting sauce to the bottom of the crock pot before adding wings.
