As I mentioned in an earlier post this was the first time that I’ve planted Edamame Beans and I planted about 20 plants and I picked enough Edamame Beans that I was able to freeze about 8 pint Ziploc bags.
I also have many of the small Sun Sugar Tomatoes so we made these Apple Tomato Appetizers.
Freezing Edamame Beans
*I use a stainless steel stock pot filled with water and bring water to boil on medium heat.
*Then add edamame beans and blanch them by bring them again to a boil, and boil them for 7 minutes.
*Quickly drain beans from the water and place edamame beans in a bowl of water with ice to cool them down quickly. (Use as many bowls of ice water you will need for the amount of edamame beans you are processing.) I needed to bowls for the amount I processed. Leave beans in water 1-2 minutes or until cooled.
*Then label freezer bags and fill them with edamame beans and remove air from the bags with a straw and freeze. Best if used within a year from freezing.
We like to dip Edamame Beans in soy sauce and then just eat the soybeans inside. We think they are yummy!
Apple Tomato
*Small Tomatoes of your choice, cut in half
*Fresh Mozzarella, cut into squares or you could use Mozzarella String Cheese sliced in circles
*Fresh Basil leaves
*Tooth Picks or picks of your choice

For the sauce:
Mix 2 parts Soy Sauce to one part Olive Oil and drizzle over Apple Tomatoes.
