Taco Pizza Rolls

Try these easy taco pizza rolls, they fast and a quick snack.  We made them for our Halloween Dinner and made them into Mummy Calzones.

Taco Pizza Rolls or Mummy Calzones

Ingredients:

*
*1 can Refrigerated Pizza Dough

*1 pound Lean Hamburger, cooked/browned (165*F.) drained and rinsed

*1/2 packet Taco Seasoning

*1 tablespoon dry Minced Onions

*1/4 cup water

*Pizza or Marinara Sauce or even Ketchup

*Whole Olives, eyes for Mummy Calzones

*Cheddar Cheese or Mozzarella, grated

*1 Egg, beaten, egg wash for Mummy Calzones

Taco Pizza Roll:

*
After cooking hamburger add the taco seasoning, water and onions. Simmer for 2-3 minutes until onion are translucent, set aside.

Remove pizza Dough from the can, pressing out the dough using rolling-pin if needed.  On the rolled out pizza dough start with the sauce, hamburger and cheese.  (You can also leave off the sauce and use if for dipping the pizza rolls.)

Roll-up the dough into a log, like it looked  before you unrolled the dough from the can except with the filling.

Slice into 1 – 1   1/2 inch slices (Dental floss works great for slicing/cutting the dough) like you would when you make cinnamon rolls.

Place the taco rolls on a Silpat covered 1/2 baking sheet or spray baking sheet with cooking spray and bake in a 400* F. oven for 10-12 minutes or until done.

Mummy Calzones:

Follow the taco pizza rolls instructions for  hamburger mixture.

Remove pizza dough from the can but don’t un-roll the pizza dough. Cut into 1   1/2 inch slices.

Then take the slices and roll the dough into balls, roll out the dough balls on a slightly floured surface into an oblong shape.

Add the sauce, hamburger and cheese to the center of the oblong dough, leaving the top and edges for cutting and folding over mummy calzone.

Then make horizontal cuts on the sides of the oblong dough, avoiding  the topping strip and cut with a knife or pizza cutter 1/4- 1/2 inch cuts leaving a larger cut at the top and bottom.

Fold up the bottom of the mummy calzone, closing the bottom. Take a strip of dough from each side of the mummy and bring up the center of the toppings, crisscrossing/over-lapping the dough strips, working your way to the top of the mummy calzone.

Add the whole olive eyes before folding down the thicker top strip of dough, folding down around the olive eyes. Brush the mummy calzones with egg wash before baking.

Place mummy calzones on Silpat or cooking spray covered 1/2 baking sheet and bake in a 375*F. oven for 10-12 minutes or until done.

Apple Pie Caramel Apples

Apple Pie Caramel Apples

*15 Apples, Granny Smith or Red Delicious

*1   1/2 bags (12 ounce bags) fresh Guittard White Chocolate Chips or Ghiradelli White melting Wafers

*2   1/2 packages fresh Kraft Caramels (13.5 ounce bags), unwrapped or Peters Caramels

*1 tablespoon Milk or Water, per package or ounces of caramels to be used when melting

Apple Pie Sugar mixture:

*3/4 cup fresh Brown Sugar

*3/4 cup Granulated Sugar

*1/2-1 tablespoon Cinnamon

*Silpat or Parchment Paper

*15 Wood Apple Sticks, or sticks of your choice

Wash and dry apples. Tip: if you are using purchased apples with a wax on them use 1 tablespoon Lime Juice and 1 tablespoon Baking Soda in a large glass bowl of water. Place apples into bowl and let sit a minute or so and wash/scrub apples, this will help the caramel to stick better to the apples.  (My other favorite way to remove wax is by dipping the apple in boiling water for about 20-30 seconds, remove and dry with clean towel or paper towel.)

Melt 1 bag (13.5 ounces)of caramels, plus 1 tablespoon water at a time in the microwave (in a small round glass bowl that apples will be able to be dip in easily) removing stirring occasionally with wooden spoon until melted. (Dip as many apples as you can with one bag of caramels before melting another bag of caramels for dipping.)

Push apple sticks into bottoms of apples and dip into melted caramel 3/4 of the way up the apple or more if desired.

Let caramel set 20 minutes in the fridge, meanwhile melt white chocolate chips or wafers in another small glass bowl in the microwave, watching and stirring occasionally until chips are melted.

Dip the set covered caramel apple into melted white chocolate, dipping as high-up on the apple as desired.  Sprinkle on apple pie sugar coating while chocolate coating is still “wet”.

Apple “Pie” Sugar-Coating Mixture:

Combine and mix well the granulated sugar, brown sugar and cinnamon in a bowl or container. Place or set the caramel/wet white chocolate covered apples one at a time into mixture and scoop/sprinkle apples with apple “pie” sugar-coating.

Place covered apples on Pam (cooking spray) sprayed parachment paper or Silpat is best to use and allow to dry/set in the fridge for another 20 minutes and Enjoy!!!
