Apple & Pecan Salad

Salad Ingredients:

* 2-3 Apples, cut in bite size pieces, I used Red Delicious Apples
* 2 tablespoons Lemon Juice

In a bowl of water put in Lemon Juice and Apple Pieces and set aside while cutting up the rest of Salad.

* 2-3 Celery Stalks, diced
* 1/8 cup Dried Cranberries
* 1/2 cup Grapes, cut in half
* 1/2 cup Pecans, roasted in a cast iron pan just until you can smell them
*2 tablespoons Flat-leaf Parsley, chopped

Drain Apples and add to the above ingredients adding the pecans just before serving.

Dressing:

*1/2 cup Greek Yogurt
* 1/4 cup Olive Oil Mayonnaise
* Zest from a 1/2 Lemon
*1 tablespoon of Honey
*Fresh Ground Pepper to taste

Mix together and add to the prepared Salad ingredients. Refrigerate until ready to serve.

Serve on a Layer of Iceberg Lettuce.

Cinnamon Baked Apples

If your like me you probably just picked off all the apples off your Apple Trees and need to get using them so I thought this would be a good recipe to share, of course you can also use store bought apples.

Cinnamon Baked Apples

*Apples, of your choice
*Gjetost Cheese, this cheese works really well but you could try another one of your choice.
*Brown Sugar
*Fresh Ground Cinnamon

Cut off the tops of the apples, I think using ripe apples works the best it makes it easier to remove centers.

Use a Melon Baller to remove Center of the Apple until about a 1/2 inch from the bottom of the apple.

Fill the cleaned out center of the Apple with brown sugar and Cheese.

Top with Fresh Ground Cinnamon.

Fill a glass Baking Dish with one inch of Water and place filled Apples.

Bake in 350* F. Oven for 25-40 minutes depending on the size of your Apples. (Apples should become soft.)

***Your cheese will probably look more melted than mine.
