Macadamia Cookie

*1/2 cup Butter, room temperature

*1/2 cup Brown Sugar

*1/2 cup granulated Sugar

*1 Egg, room temperature

*1 tablespoon Vanilla Extract

*1/2 teaspoon Almond Extract

*2 cups All-purpose Flour, sifted

*1/2 teaspoon Baking Soda

*1/2 teaspoon Sea Salt

*1 and 1/3 cups White Chocolate Chips

*1 and 1/2 cups Macadamia Nuts, chopped or (Maura Loa 6 ounce dry roasted macadamia baking pieces)

In a stand mixer with paddle attachment on medium low speed or by hand, cream together the butter, brown sugar and granulated sugar.

Add to the creamed mixture the egg, vanilla extract and almond extract. Mix just until combined.
In a mixing bowl sift the dry ingredients: Flour, baking soda and salt.

Slowly add the dry mixture into the wet mixture just until combined. Remove from mixer and add the white chocolate chips, macadamia nuts and stir them in to cookie dough.

Refrigerate cookie dough for 2 hours and scoop cookies onto a Silpat covered 1/2 baking sheet.

Bake the cookies in a pre-heated 375* F. oven for 8-10 minutes or edges barely turn golden brown.

Makes around 34 cookies, using 2 tablespoon Cookie Scoop

Candy Coated Christmas Corn Puffs

*3 Bags (3 and 1\2 ounce bags) Chesters Puff Corn

*1 Bag (12 ounce) Wilton Red Vanilla Candy Melts

*1 Bag (12 ounce) Wilton Bright Green Vanilla Candy Melts

*2 teaspoons Vegetable Shortening

Make two batches one red and one green

*

One Batch Recipe

In a bowl add 1 and 1/2 bags of the puff corn.

In a glass bowl that is microwave safe melt a bag of red wafers with 1 teaspoon shortening. Melt in 30 second increments until almost melted and stir to melt remaining wafer pieces.

Pour half of the melted mixture onto puffed corn and stir until coated and add the remaining melted wafers, stirring gently until mostly all puffs are coated.

Place and spread coated puff corn onto a Silpat covered 1/2 baking sheet and allow to coating to set.
Repeat procedure for the second green batch.

Mix to dry batches together if desired and serve!
