Veggie Pasta/Worm Salad

 

 

We made this salad for our Halloween Dinner and it was so yummy.   I wanted to post it as a Veggie Pasta Salad too!  It is great recipe for any family gathering.

Worm Pasta

*



*12 ounce Barilla Veggie Spaghetti, breaking in half if desired, cooked

*1/2 bag (8 ounces)  Tinkyada Pasta Joy Fusilli (Brown Rice Pasta), cooked

*1 cup Snow Peas, fresh or frozen

*1/4 cup Yellow Bell Pepper, diced, fresh or frozen

*1/4 cup Red Bell Pepper, diced, fresh or frozen

*1/4-12 cup Shredded Carrots, fresh or frozen

*1 small White or Yellow Onion, Chopped

*1 Clove Garlic, pressed or minced

*2 tablespoons Extra Light Olive

*1 tablespoon Butter

*1/4 cup Hoisin Sauce

*1/4 tablespoons Rice Vinegar

*1/4 cup Orange Juice Concentrate

*3 tablespoons Soy Sauce

*3 teaspoons Sesame Oil

Toppings:  Grated Parmesan Cheese and Cilantro Leaves

Cook the pastas according to directions. Rinsed and drained.

Sauté in skillet with extra light olive oil and butter: Snow peas, red and yellow bell peppers, shredded carrots, onions and add garlic the last-minute of sautéing.

In a small mixing bowl, whisk together: Hoisin sauce, rice vinegar, soy sauce, orange juice concentrate and sesame oil.

Toss/Combine in large mixing bowl the pastas, sautéed vegetables and coat with Hoisin sauce mixture. Refrigerate until ready to eat.

Spider Cookies

We know you have seen many of these type of spider cookies on Pinterest and wanted make some for our Halloween Dinner, they’re easy to make and your kids will love them.

Peanut Butter Cookie Cups

*2 (17.5 ounce) packages Peanut Butter Cookie Mix, we have used Betty Crocker brand, make cookie dough make as directed on package or you could use Pillsbury refrigerated Peanut Butter Cookie dough which we used to make these cookies

*

*1 pound 3.5 ounces package Reese’s Miniatures Peanut Butter Cups, family size, un-wrapped (about 65 per package) you will have extras

*

*Dark Chocolate Melting Wafers, follow melting instructions on bag

*

*Pastry Bag with small Tip

*Wilton Candy Eyeballs or make White Wafer Eyeballs, instructions below

Using a cookie scoop, scoop out cookie dough and roll into round 1-2 inch dough balls.  Place the dough balls on a flat cookie sheet and refrigerate an 1 hour.

*On a Silpat covered 1/2 baking sheet, bake the cookies in a pre-heated oven at 350*F. for 9 to 11 minutes.

Remove the baked cookies  from the oven adding the Reese’s peanut butter cups to the center of each baked peanut butter cookie.

Make sure cookies are still hot/warm from the oven, when adding Reese’s peanut butter cups. Allow peanut butter cookies  to cool before piping on the melted dark chocolate wafer spider legs. We opted to only put 6 legs on our spiders instead of 8.

Also use the melted chocolate to attach eyeballs to the peanut butter cup.

In the picture white chocolate wafers are shown but we used dark chocolate wafers.



Eyeballs

*1/2 cup White Chocolate Wafers, melted
*Mini Chocolate Chips
*Pastry Bag with small tip
*Wax Paper
Melt the white wafers in a I cup measuring cup, melt in the microwave in 30 second increments until melted.
Scoop melted wafers into the pastry bag and pip small dots onto the wax paper adding a mini chocolate chip to the centers before they dry. When dry remove from wax paper and add to desired cookie etc..
