Spring Family Dinner (part 3)

Snicker Salad has been one of my family’s favorite salads for about 20 years, so we had to make it as part of our meal. I first got this recipe from my sister Heidi.

Snicker Salad

* 2 containers of frozen Whipped Topping
* 1 package Cream Cheese of your choice

Thaw Whipped Topping in the fridge and then mix with Cream Cheese, the less fat in the Cream Cheese the easier it is to mix.

I like to fill a glass bowl with water and add a couple of tablespoons of lemon juice to it and then cut up apples in bite size pieces. Place cut apples into the water until all apples are cut into pieces.

* 3 Red Delicious Apples
* 3 Granny Smith Apples

* 4 Large Snickers cut into bite size pieces.

Drain Apples from Lemon water and add to Cream Cheese mixture. Then gently mix in Snickers.

In this picture I used only two Granny Smith Apples, because my family likes less tartness and Three Braeburn only because that’s what I had on hand. I usually use Red Delicious Apples.

This is a Crock Pot Ham recipe. You can find the recipe here macey’s

Crock Pot Ham

*1 pre-cooked Spiral Cut Ham (make sure it will fit in your crock pot)
*2-3 cups Brown Sugar (I used 2 cups)
*1 (8 Oz.) can Crushed Pineapple ( I used 20 Oz. can)
*1 1/2 -3 cups Maple Syrup (I used 1 1/2 cups)
*3 cups Pineapple Juices ( I used just the juice from the can of pineapple)

I placed ham on its side in the crock pot because it was taller than my crock pot. Put the juice from the pineapple and pour over ham. Then layer on top of ham drained crushed pineapple, brown sugar and then maple syrup which will be the glaze. Cover and place on low for 4 – 5 hours. ( mine took more like 6 hours.) Baste with the juices a couple of times.

Creamy potatoes

* 10 cups Shredded Hash Browns Potatoes ( I just used 1 large bag of frozen)
* 1 10 Oz. can of Cream of Chicken Soup **( I used a homemade recipe)
* 1 1/2 cup Light Sour Cream or low fat
* 1 cup Milk of your choice or Greek yogurt
* 1 cup of Havarti Cheese
* 1 cup of Gruyere Cheese (I used a mix of : Parmesan, Asiago , Mozzarella and Provolone)
* 1 tablespoon grated sweet onion ( I used a small sweet onion grated)

Topping

* 1 1/2 cups Panko Bread Crumbs
* 2 tablespoons Butter, melted
* sprinkle with Sea Salt

Grease or spray with Pam a 9×13 pan.

Place hash browns in a bowl. Set aside. Mix in a separate bowl cream of chicken, light sour cream and skim milk until smooth. Then stir in onions and cheeses.

Combine creamy cheese mixture with the Hash Browns. Pour into your greased 9×13 pan and top with melted Butter, Panko Bread Crumbs and sprinkle with Sea Salt.

Bake at 350*F. For 50-60 minutes or until the top is crusty and bubbly.
