Carrot Cucumber Sandwiches

8 Bunny Sandwiches

*
*1 loaf White Sandwich Bread, sliced (at least 16 slices)

*1-2 Mini Snacking Cucumbers, seedless or 1/3 English Cucumber, thinly sliced

*1/4 cup finely grated Carrots

*6 ounces Greek Yogurt Cream Cheese, slightly softened

*1 tablespoon Minced Shallots

*1/8 teaspoon Garlic Powder

*1/8 teaspoon Onion Powder

*2 teaspoons finely chopped Parsley

*Sea Salt and Freshly Ground Pepper, to taste

Cream/mix together the:  Carrots, cream cheese, shallots, garlic powder, onion powder, parsley, salt and pepper.  Spread on one side of bread slice/bunny and layer with sliced cucumbers and another bunny bread slice making a sandwich.  Repeat for each sandwich.

**Use a Bunny Cookie Cutter or cutter of your choice. Make sure to remove crusts if you don’t use a cookie cutter and slice the sandwiches in triangle halves and then cut again for mini triangle sandwiches.

Cream together:

*

*3/4 cup granulated White Sugar

*1 cup Brown Sugar, packed

*2/3 cup Butter Flavored Shortening

*2/3 cup Butter, melted (1/2 stick plus almost 3 tablespoons)

* Wet ingredients:

*

*1 Egg

*1 Egg Yolk

*2 tablespoons Milk

*2 teaspoons Vanilla Extract

* Dry ingredients:

*3 cups Bread Flour, sifted

*1/2 Quick Oats, slightly blended/chopped

*1/4 teaspoon Kosher Salt

*1 teaspoon Soda

*1   1/2 teaspoon Baking Powder

*Chocolate Chips, your choice, used for holding on Cadbury eggs

*Mini Cadbury Eggs (Milk Chocolate, White Candy or Dark Chocolate) add after baking

*

*Directions:

* In a stand mixer with paddle attachment on medium-low;  Cream together the sugar, brown sugar, shortening and butter, mixing until light and fluffy in color (1-2 minutes).

* Add one egg at a time on medium speed. Then add the milk and vanilla extract.

* Sift in a bowl the bread flour, baking soda, baking powder and kosher salt.

* Slowly add the flour mixture in thirds to the wet-creamed mixture along with the quick oats. Mix just until combined scrapping the sides of the bowl at least once.

* Cover/wrap the dough with plastic wrap and refrigerate at least two hours or overnight.

* Scoop cookies (we used 18/8 (#2) cookie scoop or disher #16 ) onto a Silpat covered baking sheet or parchment paper.  After scooping cookie dough, add 3 chocolate chips to the center of each scooped cookie making a triangle shape.  Then after baking add 3 Cadbury eggs.   Note:  Cadbury eggs are add last so they won’t  melt and crack as easily.

*Bake the Cookies in the oven for about 10 minutes in a preheated oven 350*F.

* Makes 4 1/2 dozen
