Mini No-bake Lime Cheesecake

*

*10 Graham Crackers, crushed
*1 teaspoon Granulated Sugar
*2 tablespoons Butter, melted
*1  8 ounce package Greek Cream Cheese Yogurt, softened
*1/2 can Sweetened Condensed Milk
*1/2 cup Vanilla Greek Yogurt
*Juice from 2 (small) Key Limes or 2-3 teaspoons Fresh Lime Juice
*Top with Whipped Topping of your Choice, we used Reddi Whip, optional
*Slice of Lime for garnish, key limes are small and work well

Crust
*
Crush graham crackers in a Ziploc Bag or we used a small food blender.  Place graham cracker crumbs in a bowl adding the sugar and melted butter, mix, mixture will be crumbly.

Lime Yogurt Cream Cheese Filling
*
Place yogurt cream cheese in a small mixing bowl stirring until smooth.  Then add vanilla yogurt, sweetened condensed milk and lime juice.
Layer the filling in glasses starting with the crust, layering as desire*d.  Top with whipped topping or Graham cracker crumbs and lime slice if desired.

We made these Mini No-Bake Lime Cheesecakes for our St. Patrick’s Day Dinner Party.  Make them for any party or dinner for a quick dessert.

Serves 9-10 (4 ounce glasses)

Jalapeño Orange Lime Soda

 

Jalapeño Orange Lime Soda

 

Flavored Simple Syrup 
*
*1/2 cup Water
*1/2 cup Granulated Sugar
*4 Limes, Juiced
*Zest Peel of all 4 Limes
*1 Orange, Juiced
*Zest Peel of 1 Orange
*1-2 Jalapeño, sliced  (use seeds for heat if desired)
*1 Jalapeño, sliced for garnish (optional)
*Chilled Lemon lime Soda
*
In a small sauce pan simmer 2-3 minutes on medium heat adding the above ingredients (except for the lime Juice, orange juice and lemon lime soda) until sugar has dissolved.  Remove sauce pan from stove and strain fruit peels and jalapenos and allow flavored simple syrup to cool at room temperature and add lime and orange juice, then refrigerate  until ready to serve with lime soda.

Note:  We made shoot glass size drinks adding about a teaspoon of the flavored simple syrup or make to your taste.  Fill the rest of the glass with chilled Lemon Lime Soda and garnish with a Jalapeno, Orange or Lime slice and etc…
