Harvest Sweet Chex Mix

Sweet Sauce/Coating:

*3/4 cup Butter or Plant Based Olive Oil Butter

*3/4 cup Brown Sugar

*1 tablespoon Vanilla Extract

Chex Mix:

*2 cups Wheat Chex Mix

*6 cups Corn Chex Mix

*3 cups Rice Chex Mix

*1 cup Golden Graham’s

Mix-in Options:

*1 cup Salted Peanuts

*1 cup Bugles

*1 cup Round Pretzels

*1/2 cup Harvest Candy Corns

*1/2 cup Reese’s Pieces

*Any other Mix-in’s desired

Instructions:

Preheat oven to 275*F.

In heavy duty saucepan or Stainless Steel saucepan. Add the butter and brown sugar, on medium heat, bring to a boil and boil 2 minutes.

In a extra large mixing bowl add the variety’s of Chex mix, toss together. Then pour/drizzle the sweet sauce, drizzle the sauce in thirds on the chex mix, stirring between each drizzling, toss together to coat all of the Chex mix. Then using a half baking sheet with Silpat or Parchment Paper. Spread mixture evenly on baking sheet and bake for 45 minutes, stirring every 15 minutes.

Remove from oven and allow to cool completely and then toss in desired mix-in’s.

Store in an airtight container for up to a week. Great snack for Thanksgiving while guest wait for the big meal!!!

Pumpkin Fluff

*1 cup canned Pumpkin, not pumpkin filling (15 ounce can be used for extra pumpkin taste)

*1 package 3.5 ounce Vanilla pudding or Cheesecake pudding

**1 to 2 containers 8 ounce cool whip , thawed

*1/2 to 1 tablespoon Pumpkin Pie Spice, to taste

*Small Pumpkin, to cut for lid, seeds removed and pumpkin chilled,for serving (optional)

Instructions:

Combine in a medium mixing bowl the vanilla pudding and 4 ounces (half container) of the cool whip, mix until combined (use a hand mixer if needed).Then add the pumpkin and pumpkin pie spice and stir into vanilla pudding mixture.

Fold in the other 1/2 container of cool whip. **These is where you would add more cool whip, if you use the whole can of pumpkin 8 ounces is probably enough but if using the 1 cup pumpkin you might want more for fluffiness.(I like less pumpkin than the whole can, but adjust to your taste.). Chill and serve in pumpkin. Enjoy!
