Thanksgiving Sweet Potato Casserole

*3 large Sweet Potatoes/Yams (about 5 cups cut into chunks) cooked in stock pot in boiling water until fork tender

*2 Eggs, whisked

*1/4 cup Milk

*1/4 cup Buttermilk

*3 tablespoons Butter, melted

*2 tablespoons Orange Juice, I used 1 “Cutie” Clementine, squeezed

*1/4 cup Brown Sugar

*1/8 cup Maple Syrup

*1/2 teaspoon Vanilla Extract

*Pinch of Cinnamon

*1/2 teaspoon Sea Salt

*Pinch of Pepper

In an 2 quart mixing bowl add cooked sweet potatoes and smash with pastry cutter or potato masher. Then add the remaining ingredients to a medium mixing bowl, mix/whisk until combined and add to the mashed sweet potatoes.

Mix together and spoon into a  9×13 inch baking dish sprayed with cooking spray  and top with the crumble topping. Cover with aluminum foil and bake.

Crumble Topping
:

*1/4 cup Old Fashion Oats

*1/4 cup Instant Oatmeal

*1/4 cup Flour

*1/2 cup Brown Sugar

*4 to 5 tablespoons Butter, softened not melted

*1/4 cup chopped Pecans, optional

*pinch of Sea Salt

*pinch of Cinnamon

Stir together with a fork until slightly crumbly and drop small pieces onto the top of sweet potato mixture.

Bake casserole in a 325*F. oven for 25-35 minutes or until bubbly remove foil the last 5 minutes of baking to brown.

*Fudge Stripe Cookies, family size (Keeblers), base and feathers (2 cookies per turkey)

*Peanut Butter Cups Miniatures, (like Reeses), turkey body

*Malted Milk Balls, turkey head

*Baking M & M’s, beak and feet

*Cinnamon Bears, waddle

*White Candy Melting Wafers, like Ghirardelli, eyes need only one wafer

*Dark “Chocolate” Melting Wafers, like Ghirardelli, use as candy glue

Instructions:

Repeat each step for each turkey.

1. Take 1 cookie and with a knife cut the bottom off the cookie, just enough to lay flat when cookie is placed on the table.
2. Take 1 malted milk ball and cut with a knife a small pieces of the ball, again just enough to lay flat on the table.
3. Unwrap a peanut butter cup and slice the very top and the bottom of cup, again just enough to be a flat surface on each end.
4. Take a Cinnamon bear and cut a thin slice off each of the arm sides of the bear body and cut it in half to make the waddle, shape waddle more if desired.
5. Separate out of the package of baking M & M’s the yellow and orange candies and cut in half for the beak and feet. Cut as many as needed.
6. Melt wafers in glass measuring cup in the microwave on 30 second increments, stirring until melted.
7. Use the melted wafers to attach all of the candies to the cookies.
8. Take the two cookies, one with the bottom cut off and a whole cookie with the whole cookie (the base) stripped side facing down. Place melted candy to bottom of the cut side of the cookie and set/ place it next to the hole in the cookie, making sure that the strips on the cookie go vertical.

 

Now add melted candy to the cut Reese’s cup on both cut ends and place in front and in the center of the feather cookie. Add malt ball head cut side down.

Now, candy glue on beak, waddle and feet. Then use a toothpick and dip in melted white wafer and make two dots for the eyes.

Note: Let each step set before adding more turkey parts.

We made 9 Turkey’s, there will be left over candy and cookies depending on size packages you buy.
