Peppermint Butter Cupcakes
*2/3 cup Butter (about 10 tablespoons), room temperature
*3/4 cup Sugar
*2 Eggs, room temperature
*1 teaspoon Vanilla
*1/4-1/2 teaspoon Peppermint, to your taste
*1/2 cup Whipping Cream
*1/2 cup Milk
*1 3/4 cups Flour
*2 teaspoon Baking Powder
*1/4 teaspoon Salt
*Muffin Tins
*Cupcake Liners
Pre-heat oven 350*F.
Makes 20 cupcakes
Cream together in a stand mixer on medium speed the butter, sugar and then add eggs one at a time. Add the vanilla and peppermint.
Whisk together in a bowl the flour, baking powder and salt.
Slowly add the milk and cream to creamed mixture alternating with the flour mixture. Mix on medium speed until combined and pour batter into muffin lined cupcake cups, 3/4 full. Bake cupcakes for 18 minutes.
