There are a lot of takes on how to make No-Bake Oatmeal Cookies. This is the way I make them.
Robin Blue Egg Nests
***The nest is made from a no-bake cookie recipe***
*2 cups sugar
*1/4 cup powder baking cocoa
*Pinch of salt
Put in a stock pot the above ingredients and whisk together.
Add:
*1 stick of butter
*1/2 cup milk of your choice I use skim
Turn on the stove to medium heat and bring to a boil for two minutes stirring while it boils. Remove from heat.
Add:
*3/4 cup chunky or smooth peanut butter
*1 teaspoon of vanilla.
Note: I added a 1/4 cup more of the peanut butter than the original no bake recipe asks for which was 1/2 cup of the peanut butter. (I added more to help keep the nests together.)
*1 – 1/2 cups old fashion oatmeal
*1 – 1/2 cups quick cooking oatmeal
Add the oatmeal to chocolate mixture into the stock pot and mix well. Use a number 8 cookie scoop or 1/2 cup measuring cup and scoop oatmeal mixture in mounds onto wax paper, making a dip/dent in the center (make sure to dip/dent while the mixture is warm.) then add the bird eggs or peeps etc…onto the set no-bake cookie nest.
Note: The blue eggs are Cadbury mini eggs.
Cool and decorate as desired.
Mix the sugar and the powdered baking cocoa well before adding to the wet ingredients; this is important for a creamy texture.
White pretzel Sticks for nest
I used one small square vanilla almond bark or you could use 1/2 cup white chocolate chips and melt in one cup glass measuring cup in the microwave. I melt mine 30 sec. And check again another 20 sec. Every microwave is different adjust as needed.
After white chocolate chips or vanilla almond bark are melted. Put handful stick pretzels on wax
paper and pour melted white chocolate over them. Add more pretzels if needed. Separate pretzels from each other and allow to dry. When dry break each pretzel in half and put on your nest for sticks. Place them on top of your nest and then your eggs or peeps.
