Curry Chicken Salad Sandwiches

3-4 cups cubed Chicken Breasts, Cooked and cooled, rotisserie chicken works great!

3-4 stalks Celery, finely diced

*1/4 cup Parmesan Cheese

*1/4 cup Sliced Almonds

*1/4 cup dried Blueberries or Cranberries

*1/4 cup chopped Cilantro

Place the above in a large bowl.

Curry Dressing

*
*1/2 cup Olive Oil Mayonnaise

*1/2 cup Plain Greek Yogurt

*1 tablespoon Curry Powder

*3 scallions, Sliced Thin

*Juice of 1/2 a Lemon

*1 tablespoon Honey or Sugar or  Stevia Packet

Sea Salt and Fresh Ground Pepper, to taste

Whisk together in a bowl the above curry dressing ingredients until smooth. Then pour over the chicken mixture. Chill for about an hour. Serve in croissant or bun (We used French Brioche Buns and Extra Large Croissants) or make a tortilla wrap.
