Purple Creamy Coleslaw

*1/2 cup Red/Purple Cabbage, finely shredded

*2 tablespoons Onion, grated

*1 cup Matchstick Carrots or 2 Carrots, thickly grated/shredded

*1/4 cup Cilantro, chopped (optional for garnish)

*

Creamy Dressing

*
*1/2 cup Greek Yogurt

*1/2 cup Olive Oil Mayonnaise

*2 tablespoons Brown Sugar or 2 individual packets Splenda

*2 tablespoons fresh Lime Juice

*1/4 cup Orange Juice

*Sea Salt and Black Pepper, to taste

Toss together in a bowl the cabbage, onions and carrots.

In a small bowl mix together the creamy dressing ingredients and pour over the cabbage mixture and mix together and refrigerate until ready to eat.

Crock Pot Style Queso Dip

Crock Pot Queso Dip

*1 box 2 pound Velveeta Queso Blanco, cubed

*1 can Rotel diced Tomatoes with Green Chiles

*1 small can Green Chiles

*1 jar diced Pimentos

*1 small Red Onion, diced small

*3 small jalapeños, with or without seeds, diced small

*Tortilla Chips, for dipping in Queso or Soft Pretzel Bites—See Sweet Pretzel Bites

Add the above ingredients to a crock pot with liner on low for 2 hours. Then turn crock pot on warm while serving. Serve with tortilla chips, vegetables and crackers or bread cubes.

Note:  You could sauté onions and jalapeños in olive oil before adding to the crock pot if desired.
