August in the Garden

Summer is going by so fast. The garden is producing almost everything. Summer flowers are all blooming and the corn is about ready to be picked and enjoyed. Pumpkins are getting big but are still green. Green beans are producing like crazy along with the zucchini and yellow squash.

The cucumbers are ready to be pickled and the hot peppers are ready too, but I’m still waiting for my tomatoes to ripen so that I can make salsa.

I hope your gardens are doing well and you are enjoying your harvest!

Jicama & Black Bean Salsa

Jicama & Black Bean Salsa

* 1 can Corn drained or Garden Fresh Frozen Corn
* 1 can Black Beans Drained and rinsed
* 1 Tomato chopped
* 1 Jalapeño Pepper chopped
* 1/2 Medium Onion
*2 Cloves Garlic pressed or finely chopped
*1/4 cup Cilantro chopped
1 medium Jicama chopped

Combine all the above ingredients and stir them together. Then add the dressing. Refrigerate until ready to serve.

Dressing: 1/4-1/3 cup Hendrickson Salad Dressing

1 bag Tortilla Chips of your choice
