Cauliflower Cheese Sticks

Supplies needed: Food Processor, Knife , Half Baking Sheet, Silpat Baking Mat and Rubber Scraper

Ingredients:

*1 large head Cauliflower, cut or pull apart into chunks

*1\2 cup grated Parmesan Cheese

*1\2 cup grated Mozzarella, save 1/4 cup for topping after baking

*2 tablespoons Plain Greek Yogurt

*1 Egg, slightly beaten

*1/2 teaspoon Garlic Powder

*1/2 teaspoon Italian Seasoning

*1 teaspoon Garlic Salt with Parsley or to taste

*1/2 teaspoon Fresh Ground Pepper

*1 tablespoon Chopped Fresh Basil, 5-6 leaves

Instructions:

In a pre-heated 375*F. oven, bake the cauliflower on a 1/2 baking sheet with baking mat for 20-25 depending on the size cauliflower. This is to dry out the cauliflower slightly.

Remove cauliflower from the oven and place in a large mixing bowl. Add the Parmesan cheese, mozzarella cheese, egg, yogurt, garlic powder, Italian seasoning, garlic salt with parsley, pepper and fresh chopped basil. Stir until combined.

Then place the cauliflower mixture back onto the Silpat and press mixture flat about 1/4 inch thick with a rubber scraper onto the Silpat and bake pre-heated 425*F. oven for 10-15 minutes. Then remove from the oven and top with remaining mozzarella cheese and broil in oven until golden brown.

Jet Black Zucchini Bread

Jet Black Zucchini Bread

**Preheat oven 375*F.

Supplies

*Makes 4 medium small loaves 4.5 X 8.5 Loaf Pans

*Parchment Paper

*Cooking Spray

*Metal Clips, optional

Ingredients:

*4 cups peeled and grated Zucchini, squeeze out liquid in lint free dish towel and set aside.

*4 Eggs

*1 cup Granulated Sugar

*1 cup Brown Sugar, packed

*2/3 cup Extra Light Olive Oil, not regular olive oil

*1 cup Greek Yogurt

*1 tablespoon Vanilla Extract

*1/2 teaspoon Sea Salt

*2/3 cup Jet Black Cocoa

*3 teaspoons Baking Powder

*3 cups All-Purpose Flour

*1 cup Dark Chocolate Chips or Semi-Sweet, more for top if desired

Directions:

In a large mixing bowl add the 4 eggs and whisk, then add Granulated sugar, brown sugar, olive oil, yogurt, vanilla and salt. Stir in zucchini and mix until combined.

In a medium bowl sift together the flour, baking powder and cocoa. Then add a cup at a time to the wet ingredients. Mix together until well incorporated.

Divide the bread dough mixture into loaf pans lined with parchment and sprayed with cooking spray.

Bake 375*F. 30 to 40 minutes
