Red White and Blue Rice Krispies

Supplies:

*18 cups Rice Krispies, 2 (10 ounce) boxes

*18 cups Mini Marshmallows, 2 (1 pound Bags)

* 1 cup Butter plus 2 tablespoons

*Parchment Paper, for lining 3 (quarter) baking sheets

*Cooking Spray

*Wax Paper

*3 (quarter) baking sheets

*Blue and Red Food coloring, I used red food emulsion

*Stainless Steel Stock Pot or similar pot

*

Make 3 Batches Rice Krispie Treats:

For each batch you will need:

*
*6 cups Rice Krispie Cereal

*6 cups Mini Marshmallows

*6 tablespoons Butter

*Food Coloring

*
In a stock pot on medium low heat, add the butter and marshmallows. Stir until butter is about all melted and add the food coloring 8 plus drops or until desired color occurs. (The white batch needs no coloring.)When the marshmallows have melted pour mixture into parchment lined, cooking sprayed quarter baking sheet.

Press marshmallow Krispie mixture into pan using a piece of wax paper sprayed with cooking spray and press until flat in the baking sheet. Allow to cool and cut into about 2 and 1/2 inch squares and/or make the below fireworks and patriotic pops.

*Red White and Blue Rice Krispie Recipe, above

*Red Skewers, or white etc…

*Red Licorice, rope, string or I used Rainbow Berry Airhead Xtreme Sour Candy-cut into strips and then cut into 1 inch or so pieces. I just used the red strip but you could blue or yellow too.

*Circle Cookie cutter, small about 2 inches

*Pastry/Dough Scraper, for cutting 1 and 1/2 inch squares

Cut the Rice Krispies into desired shape, for each firework pile/layer 6 shapes and with the pointed end of the skewer, carefully push the skewer through the center of each shape.

Patriotic Rice Krispie Pops

*Apple Stick, for poking holes in the bottom of the Rice Krispie rectangle

*Red, White or Blue Straws, cut in half

*Pastry/Dough Scraper, for cutting

*1 to 2 cups White Ghriardelli Melting Wafers, melted for dipping and candy glue

*Red, White, Blue Sprinkles and candy stars etc…

*Silpat or Wax Paper

Cut Rice Krispies into around 2 and 1/2 by 3 inch rectangles. Then with the pointed end of the apple stick, poke into one of the top center sides (2 and 1/2 inch side) which will be the hole to insert the “Straw Popsicle Stick”. Remove the apple stick and repeat for each patriotic Rice Krispie pop.

Dip the end of the cut straw in melted wafers (candy glue) and push the straw into the hole made by the apple stick. Allow to set. Then holding the straw dip pop into melted wafers, remove and sprinkle with Sprinkles, candy stars and etc…
Set decorated dipped pops onto Silpat or wax paper and allow to set.

Chocolate Chip Mint Cookies

Chocolate Chip Mint Cookies

Makes about 56 Cookies (tablespoon cookie dough each)

*1 cup Butter, room temperature

*1 1/2 cups Granulated Sugar

*2 Eggs Room temperature

*1   1/2 teaspoons teaspoon Peppermint Extract

*1/2 teaspoon Sea Salt

*3 cups All- Purpose Flour

*2 teaspoons Baking Powder

*1 teaspoon Baking Soda

*2 teaspoons Cream of Tartar

*5-6 drops Green Food Coloring

*1   1/2 cups Semi-Sweet Chocolate Chips

Cream together in a stand mixer, on low speed with the paddle attachment the sugar and butter. Then add peppermint, green food coloring and sea salt. Mix just until food color is mixed through out creamed mixture.

Sift together in a bowl the dry ingredients: Flour, baking powder,baking soda and cream of tatar.

Then add the dry ingredients 1/2 a cup at a time. Mix just until combined. Stir in by hand the chocolate chips.

Using a tablespoon cookie scoop. Scoop cookie dough onto a Silpat covered 1/2 baking sheet.

Bake cookies at 350*F. for 8- 10 minutes.
