Watermelon & Jalapeño Salsa

We had a Watermelon Dinner a couple of days ago and this is one of the recipes from that dinner and there will be more recipes and post on the dinner in the next few days. This is very Yummy Salsa!

Watermelon & Jalapeño Salsa

Step 1

* 4 cups watermelon Diced

Step 2

*1 small Red Onion minced
*2 Jalapeno Peppers minced and seeds removed, wear gloves to protect skin from burning from the insides of peppers and don’t touch your eyes or face.

I used an Electric Chopper

Step 3

*Juice from 1 Lime
*1/4 teaspoon Salt or to taste
*1/4 teaspoon Chili Powder or to taste
*1/4 teaspoon Cumin or to taste

Combine onions and jalapeno mixture to the lime juice and spices and set aside for about ten minutes to let flavors blend together and then add to the watermelon.

Serve with White Corn Chips or chips of your choice.

Jicama & Black Bean Salsa

Jicama & Black Bean Salsa

* 1 can Corn drained or Garden Fresh Frozen Corn
* 1 can Black Beans Drained and rinsed
* 1 Tomato chopped
* 1 Jalapeño Pepper chopped
* 1/2 Medium Onion
*2 Cloves Garlic pressed or finely chopped
*1/4 cup Cilantro chopped
1 medium Jicama chopped

Combine all the above ingredients and stir them together. Then add the dressing. Refrigerate until ready to serve.

Dressing: 1/4-1/3 cup Hendrickson Salad Dressing

1 bag Tortilla Chips of your choice
