Italian Salad

Italian Salad

*1/2 Head of Iceberg Lettuce, chopped or 1/2 package (11 ounce package) Just lettuce
*1 package Spring Mix
*1 can Drained Artichoke Hearts, chopped
*1/2 Red Pepper, diced
*1/2 Green Pepper, diced
*1/2 cup fresh grated Parmesan Cheese
*1/2 cup Black Olives, chopped, optional
*1/4 White Onion Thinly Sliced

Toss together the above salad ingredients.

Dressing

*1/4 cup Red Wine Vinegar
*1 teaspoon Garlic Salt
*1 teaspoon freshly ground Black Pepper
*1 teaspoon dried freshly ground Italian Herb Seasoning
*1 tablespoon Honey
*1/4 cup Extra Light Olive Oil

Whisk together the above dressing ingredients until well incorporated, add dressing to salad ingredients just before serving. Keep salad and dressing refrigerated.

Sweet and Sour Turkey Ham

Sweet and Sour Turkey Ham or Chicken

(Rice, cooked as directed on package)

Meat & Vegetables

*2 cups cubed Festive Tender Cured Turkey Ham, slightly browned in extra light Olive Oil (2 tablespoons) in frying pan or (Chicken Tenders, cooked and cut in bite size pieces)

*2 cups of carrots, sliced and cooked

*1/2 large Onion, chopped and sautéed
*1/2 Red Pepper, chopped and sautéed
*1/2 Green Pepper, chopped and sautéed
*3 tablespoons Olive oil

Sauté in Olive oil in frying pan the above vegetables except for the carrots.

*1-2 cans 8-ounce Pineapple Tidbits, drained and use pineapple juice in sweet and sour sauce

Combine the above cooked ingredients, pineapple and add to the sweet & sour sauce except the cooked rice.

Sweet & Sour Sauce

*Pineapple Juice, from the canned pineapple tidbits
*8 tablespoons cold Water
*1/2 cup Cornstarch
*1/4 cup White Vinegar

*1 tablespoon Low Sodium Soy Sauce

*1/3 cup Granulated Sugar
*1/2 cup Brown Sugar

Combine the cornstarch and water and then add the remaining sauce ingredients. Cook in stock pot on medium heat stirring constantly until sauce thickens, adding more cornstarch if needed. Then add the above meat and vegetables to this sauce. Keep warm until ready to serve over cooked rice.
